Digging into the Easter treats

Is it really Monday already?

My weekend was full off too many good things, it’s a shame it has to come to an end so quickly.

In case you missed it:

After all that I didn’t take one nap the whole weekend!

Though I did get a chance to sleep in this morning.

I see the pool in my near future, so I took advantage of working out in the afternoon and gave myself an extra hour of sleep. It was lovely. 🙂

I could hardly wait to break into some of my Easter basket treats for breakfast.

Namely the currant scone and pumpkin nut bread.

Wowza! It was everything I had hoped for. Sunch a shame Sunshine Bakery isn’t down the road from me… of maybe that’s a good thing. 😉

With my bread items I made a bowl of yogurt and fruit.

  • Chobani Pomegranate Yogurt
  • Strawberries
  • Ground Flax
  • Chia Seeds

The countdown is on until the user group conference I’ve been planning over the past few months. T-minus 48 hours until we land in New Orleans and I still have so much to do!

Better get on it!

have fun in New orleans! I was just there (it’s where I grew up and all my family lives) for Easter! should have nice weather!

You MUST MUST MUST read the book: “Born to Run” by Christopher McDougall. It is my favorite book in the entire world, and to make it even better, a good friend of mine is in it! wow meghann i just read about your 50 K-what a race! i did a trail race yesterday that had a 50 K option-you guys are amazing…..my 8 K was hard enough-great job girl!

Yummm! I love yogurt and fresh fruit. That pumpkin bread also looks moist and delicious, but I could do without the nut 😛 Hope you have a great day and that it isn’t too stressful with the build up to the conference!

Pumpkin nut bread… so good! I just made some pumpkin almond oat muffins for my breakfasts this week… I’m sad that it’s almost no longer pumpkin season! I guess maybe I should go to the store and see if I can stock up on some puree before it’s too late?!
