Almost Like a Souffle for Breakfast

Good Morning!

Playing weekend catch up?

In case you missed it:

‘Twas not a pretty morning in Central Florida this morning.

Boooo….Perfect way to start a Monday, right?

Actually it was a pretty great start to the Monday considering I was able to sleep in this morning. I could get used to the extra hour of sleep Mondays have been bringing me this morning.

I rolled out of bed around 7:00 and took my time getting ready for the day.

Which included preparing this amazing bowl of instant baked oatmeal.

I followed Tina’s directions and combined a packet of Quaker’s True Delights Hazelnut Mocha Instant Oatmeal (a free sample) with pumpkin, egg whites, and baking powder.

After two minutes in the microwave I got this lovely cake like creation.

That I topped with almond butter, yogurt, pear, and pumpkin spice.

Mmmm…. the texture of the instant baked oatmeal reminds me of a soufflé. It’s light and melts in your mouth, yet has the staying power of regular ole oats. Delicious.

Time to get this party errr…. work day started.

Yum! I love the sound of a soufflé. I need to try that, but I don’t really keep baking soda handy. I hope it will work without it

Hehe that does look like a souffle cake thing! Luxury 🙂
I tried baking oatmeal this morning….Not such a fan – I think stove top oats is THE superior way to cook oats, IMHO!

i made my oats in the microwave this morning for the first time in a loooong time. they turned out really good too!

Yum, that sounds good!!! I have been meaning to try that recipe but I haven’t gotten around to it yet. I love oats in any form though!

RASCAL FLATTS! I LOVE THEM!!! So lucky that you managed to watch the concert..FOR FREE! Better then not seeing them at all…LOL. That soup looks amazing. It would be perfect for a day as such in Boston (cold, windy, and raining = yucky!).

Random question- how many marathons do you do each year? I was thinking about doing a second this year, but I’m not sure about how my body will feel about that

I did my first marathon in May of 09 and this will be my 4th marathon since that first one.
