Hummus and Jelly Sandwich

Hummus & Jelly Sandwich alright… or you know pita. What-ever works. ;)

After my tempeh & jam sandwich yesterday, a few commenters challenged me to think even further outside the box with crazy sandwich combinations that involved a fruit spread. A challenge that intrigued me and one I could not get out of my mind!

As I was pulling out the ingredients for a hummus pita for lunch today, I saw the Crofter’s superfruit spread again and figured why not?

Hummus and Jelly? Mmmm…..pretty good!

I’m telling you the crazier the combination, the better it is! I added some mushroom and spinach to the hummus and jelly pita to give it some bulk and enjoyed every bite. Maybe I should just start covering everything I eat in a fruit spread of sorts?? Oh, the possibilities!!

And the last of a bag of blue corn chips with salsa.

Before lunch I nibbled on a mini Peanut Butter Cookie Larabar.

I would have never thought to pair hummus with jelly… but why not! It looks great!

Hmmmm….I would totally try this although I did take a couple seconds for me to wrap my head around it. I can imagine it tasted pretty good though. Good work, Meghann :)

If you have time, make your oatmeal in the morning, pop it in a Thermos, they have wide mouth ones, and when you get out of the gym or back to your desk, Voila, warm oatmeal. Works for soup tooo.

You’re lucky to be swamped at work! Honestly…sometimes I don’t have enough to do and it KILLS me. We’re in the same profession too. Marketing right? ;)

Was the hummus plain!? I can imagine that tasting a tad weird if it was like, funky onion flavour or something :P I’d try it though!

Wow, I’m impressed. Hummus+jelly and jelly+tempeh just make my stomach churn! I shouldn’t knock it til I try it, I guess, but dayum haha!

Now that is a combo I have never seen before! But, I love hummus with apples so I know that hummus + sweet combo works really well! Yum!

So I have to ask…. was it plain hummus, or flavored? Because I could totally see it if it were plain hummus – it would almost be like PB&J. And I can also see the spinach on it. Heck there’s spinach with fruit in the Monster Green smoothies, so why not? When it’s fresh it has such a light taste. The only thing I’m questioning is the mushrooms…

I’m not sure if you’ve tried this combo yet but spinach, nutella, & creamy almond butter w/ sea salt is amazing :) I’ve even tried it with carrots instead of spinach!
