Waffles and Princesses

Good Morning!

Last night I stayed up way past my bedtime working on my sister’s princess half video (it’s at the end of this post) and when my alarm went off this morning I did not want to move. If it wasn’t for Maddie and her never ending kisses I would probably still be in bed right now.

I debated on going on a long run, but instead decided to keep it short with a 40 minute speed work out on the treadmill. I started with a 15 minute warm up at 6.5 and then did 8 1:00 intervals of 8.5 with a 10 minute cool down.

For breakfast I could not wait to dig into one of my leftover waffles from breakfast on Saturday.

I topped the waffles with a mix of almond butter, plain yogurt, white nectarine, and cocoa nibs.

I had almost forgot that I had added extra cinnamon to the mix on Saturday. That first bite was a great reminder! The cinnamon spice had really developed over the last couple of days in the waffles. Since I LOVE cinnamon I thought it only made the waffle taste better. :)

Haha! Thanks Meghann! I love it! Obviously I can not do math and run at the same time. lol :) That really was an awesome race. Can’t wait to run it again next year with you!

LOVE the video! I need to treck down to Disney for a race some day. I think I would enjoy it so much more than the slush and snow they have up here in Minnesota :)

Great video! You’re such a good sister!! I love that Kelly was miscounting during the race… too funny! At least she was underestimating, so it didn’t seem like she had as far to go!! Congrats again to Kelly!

Thanks again for introducing me to the concept of fruit on top of waffles! I was always a butter + maple syrup gal, but you’ve converted me :) I dice up an apple or pear, heat it in the microwave with some cinnamon sugar, then throw it all on top – SO good!

Do you re-heat your waffles before you eat them?
