For the past year or so I have been drooling over the pumpkin butter and tempeh sandwiches that are some what regularly featured on Katheats.com.
The combination of tempeh and pumpkin butter (or any sort of jam) seemed a little out there, which I believe only enhanced my need to try it. It has always been my philosophy that the stuff that seems ‘out there’ is usually the stuff that tastes the best.
After so many months of thinking to myself ‘I need to try that’ I finally took the plunge today and made a tempeh, Crofter’s Superfruit Spread, and spinach sandwich for my lunch.
Umm… yeah….Why did I wait so long to try this again? Basically this sandwich rocked!
If you enjoy turkey and cranberry sandwiches, then you are going to LOVE this combination. It reminded me left over Thanksgiving sandwiches; the only thing missing was the taters. The sandwich was sweet, chewy, and absolutely amazing. I’m sure you will be seeing this combination again and again on Inner Workings…
With the sandwich I had a handful of snap peas.
I love how fresh these taste raw. They are so light and crispy, I instantly feel healthier with every bite.
I also had some blue corn chips with salsa.
All together.

I’ve been putting pumpkin butter in all my sammies lately–such a secretly amazing addition!! Pumpkin butter and mozzarella cheese is the latest!

I’ll have to give that a whirl– I do the same thing every time I see it on Kath’s blog! I love tempeh (raw) and hummus wraps too– you should give that a try!

I dunno if Tempeh isn’t my thing or I’m just preparing it wrong. I made it once and it was soooo bitter and weird tasting. Is there something you do to prep it before, or do you just open up the package, slice and eat? The sammie looks delicious:)
Oh man, that sandwich looks perfect! I remember (just five years ago, maybe) being so against sweet-and-savory sandwich combos, but I’ve really come around now. I’m vegetarian, but I love me a good Quorn Turk’y roast + cranberry leftovers sandwich!
