Happy Saturday everyone!
Derek and I were party animals last night. I believe we were both snoring on the couch before 10:00. P-arrrr- tay!
At least the early bed time made waking up at 6:30 for our 5 mile run this morning not seem like big deal at all.

We headed to a favorite trail for the 5 miles and kept it at a 10:00 min/mile pace. Derek did great, especially for someone who just ran his first 15k last weekend! He is already thinking about his next race. I smell a 10k in his very near future.
I proudly wore my new Gasparilla Marathon tech tee for the run.

Derek proclaimed his desire for waffle during the run, but I knew I was out of eggs. Once back in the apartment I did a quick google search for vegan waffles and found a simple ‘Naked Vegan Waffles’ recipe.

The recipe made a TON! Looks like I’ll have loads of left over waffles to enjoy in the next couple of weeks.

Derek made a delicious strawberry and peach topping for the waffles using fresh strawberries, a peach, and strawberry jam that he heated up in the microwave.

Derek and I still have to go all the way to Disney to pick up our volunteer packets for the Princess half tomorrow before we meet up with a few of my favorite bloggers! Better get a move on!

I saw some vegan pancakes the other day that looked simply awful, so when this was titled Vegan Waffles, I was really expecting a similar disgusting looking dish. To my surprise, these waffles look amazing. <3

I hate when I don’t have eggs for pancakes/waffles. That’s why I keep vegan egg-replacers just incase. That way I can still have my buckwheat eats.
