Some nights I come home with a clear plan in my head for dinner. I’ll know exactly what I have in my fridge and exactly how I want to prepare it. I may even go as far as having the whole week of meals prepped ahead of time and marked on my google calendar for easy reference.
BUT, then there are the nights – like tonight – when I come home with no clue what to make. I’ll just randomly start pulling items out of the fridge until a complete meal forms right in front of me.
These meals tend to be my most creative and favorites. ๐
Tonight’s Creation?
Ham, Apple, & Kale Medley
- 2 Slices of Ham
- 1/2 Apple
- 1/4 small onion
- 1 Small Bunch of Kale
- 1/2 cup Apple Sauce
- Cinnamon
- Pepper
- 1/2 cup Cooked Barley
Start by prepping the ham, apple, and onion
Add to a hot pan and cook until onions and apple are soft
Drop in the kale
The sauce consisted of applesauce, cinnamon, and pepper. If you had some maple syrup on hand I believe that would make a great addition as well.
I finished my bowl off with the already preprared barley
Can’t forget the cornbread. ๐
Yum! Like I said above this meal would have been amazing with just a touch of maple syrup, but it was also delicious as is.
Before my doctor’s appointment this afternoon I had a homemade granola bar.
Dessert tonight was a combination of dried kiwi, mini pb cups, dark chocolate edamame, and dark chocolate power berries.

I forgot how much I loved ham! It’s a shame the Applegate Organic is so expensive, or I’d get it more often. Perhaps I just need to look for different brands? I’m sure the WF deli can be quite cheap

I love when you showcase meals that you just randomly throw together…they always turn out looking delicious, and it’s a reminder that you can eat healthy and satisfying meals even without having a concrete plan beforehand!

I wish I was one of those people who could just whip up a meal from the contents of my fridge. I first need to work on my cooking skills but my ultimate goals is to be able to “throw” a meal together.

What do you film your videos with? I’m also a runner and I’d love to film throughout my next race, but I couldn’t imagine carry a huge camera while running!
I run with a Flip camera. Its easy peasy to use and tiny enough to fit in my pouch.

That sounds exactly like a soup my mom used to make growing up except she used sweet sausage in place of the ham and then added chicken broth!
