Tonight’s Creation

Some nights I come home with a clear plan in my head for dinner. I’ll know exactly what I have in my fridge and exactly how I want to prepare it. I may even go as far as having the whole week of meals prepped ahead of time and marked on my google calendar for easy reference.

BUT, then there are the nights – like tonight – when I come home with no clue what to make. I’ll just randomly start pulling items out of the fridge until a complete meal forms right in front of me.

These meals tend to be my most creative and favorites. ;)

Tonight’s Creation?

Ham, Apple, & Kale Medley

  • 2 Slices of Ham
  • 1/2 Apple
  • 1/4 small onion
  • 1 Small Bunch of Kale
  • 1/2 cup Apple Sauce
  • Cinnamon
  • Pepper
  • 1/2 cup Cooked Barley

Start by prepping the ham, apple, and onion

Add to a hot pan and cook until onions and apple are soft

Drop in the kale

The sauce consisted of applesauce, cinnamon, and pepper. If you had some maple syrup on hand I believe that would make a great addition as well.

I finished my bowl off with the already preprared barley

Yum! Like I said above this meal would have been amazing with just a touch of maple syrup, but it was also delicious as is.

Before my doctor’s appointment this afternoon I had a homemade granola bar.

Dessert tonight was a combination of dried kiwi, mini pb cups, dark chocolate edamame, and dark chocolate power berries.

Fruit Leather & Almond Butter Sandwich

Have you ever heard of a Fruit Leather & Almond Butter Sandwich?

Me neither. Which is why I thought it would be fun to give it a try this morning. ;)

You start out with fruit leather and Barney Butter.

Separate the fruit leather and smear with barney butter.

Place the other half of the fruit leather back on top and enjoy.

I’d say that was one tasty, creative snack. ;)

I have another Doctor’s appointment this afternoon (Don’t worry, I’m fine! Just another routine test) so I packed my lunch to eat while I worked at my desk.

Thank god I was smart enough to pack this last night! If I had waited until this morning I would have been screwed on time.

Once again, my lunch was made up of several parts that had to be assembled in the office kitchen.

I packed a salad base of spinach, olives, tomato, and corn with a side of black bean burger balls and salsa. I heated the balls in the toaster then added them to the salad base with the salsa.

Expect to see left over cornbread as a part of every meal until it is gone. :)

I think cornbread has to be one of my favorite types of bread. I could have a piece with breakfast, lunch, and dinner and not get sick of it.

Running Late
