Another Packed Lunch

This is the third day this week I’ve had to eat my lunch at my desk. I think that’s a record for me.

I’m trying to get out of town early to avoid some the lovely Orlando/Tampa traffic, so working through lunch was my best option. 🙂

I had quite a few veggies that were begging to be consumed this morning, so I chopped up what I could and made a veggie/ hummus salad creation of sorts.

  • Zucchini
  • Yellow Squash
  • Mushrooms
  • Tomato
  • Apple
  • BBQ Tempeh
  • Hummus

I believe this was also the third time I’ve gone with the ‘put it all in a bowl and hope it works’ technique. A girl’s gotta do, what a girl’s gotta do, right? 😉

To go with my masterpiece I had a small plate of left overs from the office party yesterday.

There was tons of cake left too, but I opted to enjoy the animal crackers I had brought instead. 🙂

Earlier this morning I had a snack of dried kiwi (courtesy of Oh Nuts!), cashews, and chocolate power berries.

In a couple of hours I will officially be on my way to Tampa to pick up my bib and packet for Gasparilla!!! Yay!!!

i’ve been reading your blog for quite some time now and you are SO STRICT with your eating! Why don’t you ever cheat? You are trianing for a marathon! It’s okay to live a little. I know you had a peicce of cake yesterday, but then you didn’t even have real dessert. And why didn’t you eat the chocolates that derek got you for vday? Even when you do have dessert, you have a miniscule amount. It’s bizzare to me.

I found dried kiwi tonight at the Whole Foods in Clearwater, FL…..I was so excited!!! Sooo sad that we don’t have a Whole Foods where I live in TN!
