Very Berry Oats

Good Morning!

Has anyone else been staying up way to late watching the Olympics lately?

Last night I may or may not have passed out on the couch trying to catch it all. And there may or may not have been one too many Cool Running references coming from my mouth. “Some people say they can’t believe, Jamaica we’ve got a bobsled team.” (By the way did you know NetFlix has a ‘very long wait’ for Cool Runnings right now?)

I have just been loving the Olympics and wanted to stay up to catch as much of the women’s figure ice skating and the cross ski events as possible. I think Derek was impressed with my winter Olympic sport knowledge. Can you believe he hasn’t watched any of it?!?!

Anyways, because of the late bedtime it was extremely difficult to get out of bed this morning.

I pretty much gave up trying to decipher what this means

And instead just did an easy 4 miles for my last training run before Gasparilla.

Before I left on my run I prepared a batch of cold oats and since I was using the last of my yogurt I decided to just make them in the container and save a bowl.

In the container

  • Plain Yogurt
  • 1/2 cup Oats
  • Strawberry Preserves
  • Chia Seeds
  • Cinnamon (key ingredient in cold oats!)

After my run I topped my cold oats with 1/2 cup Honey Puffed Wheat, Strawberries, and Cacao Nibs.

The preserves made these oats very berry and very delicious! This is an addition you will see again and again!

Any Tastykake cupcakes. I haven’t had them in years since I moved away from Pennsylvania and they only exist in “cheese steak specialty shops” in California like some ancient relic from the past. I guess it’s a good thing they’re not out here because I can’t resist them. yum.

Frozen ding dongs or grilled cheese sandwiches were the the go to items at my house growing up. I haven’t had a ding dong in ages. Maybe I should go buy one and enjoy the taste of my youth?

Question: Why do you eat fat free yogurt? Doesn’t your body require more fat due to all your exercise?

I’m proud to say I am yet to see ONE MINUTE of the Olympics! I can’t decide if that’s a good thing, or if I’m majorly missing out…

I think thats a downside to living the other side of the Pond… apparently you can catch the tail end in the morning if you are up early enough?! I’m missing the figure skating and not happy about it ;( Saving myself up for the Summer of 2012!!!

I stayed up late watching last night–soo good! But then I stayed up EVEN later beyond the end of coverage. The Inner Workings of a College STUDENT. 3am bed time :)

I’m just now watching the DVRed olympics from last night.
I was wondering about your overnight oats – it sounds like this time at least you didn’t actually let them sit overnight. How long do you think you actually need to let them sit for?

I love the olympics and can’t help but watch them always :) (although I was sad to hear that Jamaica didn’t have a bobsled team this year :( )

Why is it that everyone and their freakin’ mother can find good strawberries and I can’t?!? *sigh* Great eats!

I’ve watched the skiing, and some of the figure skating because I am an avid skier and the figure skating because I used to be a competitive skier, but not much else. I should watch Cool Runnings again, though- I have it on DVD!

Meg ~ I could not get that white bean salad off my mind! It looks sooo good. So I googled and reviewed a few recipes and created my own.

2 cans cannolli (sp) beans ~ drained
1 pkg grape tomatoes ~ sliced in half
3 garlic cloves ~ diced thinly
parsley & oregano
olive oil
lemon juice
red wine vinegar
sea salt & ground pepper

Mix all together ~ refrigerate over nite……….oh it’s soooo good ~ I just had it with my sandwich. I wish I would have brought more of it with me. Not sure if it’s like the one that you had. Next time I think I’ll add diced red onions=)

I bet preserves were absolutely wonderful in ‘overnight’ oats. Mmmmm…. I have been completely addicted to watching the olympics. Not getting nearly as much studying done as I should be…. :)

Why are the best Olympic sports always on sooo late?? I find myself squinting to watch it on my teeny tiny bedroom TV. Oh and I am guilty of hoarding a copy of Cool Runnings from Netflix. I ordered it a week ago and haven’t watched it yet. Sorry guys!! :)

My sister and I used to watch Cool Runnings ALL the time when we were younger! Such a good movie.

I’ve been watching a lot of Olympics. I think that Matt Lauer has the best job ever. Seriously, he gets to report from Vancouver for two weeks!
