Turkish Left Overs

by Meghann on February 23, 2010

As my supervisor was heading out for lunch today she was racking her brain on what she wanted to eat.

“Nothing sounds appealing,” she told me “What I really, really, really want is the exact same lunch from yesterday.”

“Me too,” I replied “That’s why I’m super excited for the left overs waiting for me in the fridge.”

I think she was a tad bit jealous of that last statement. 😉

I have a doctors appointment this afternoon and knew I would be working through my lunch hour to make up for it. Bringing yesterday’s left overs in for lunch seemed like a no brainer.

The white bean salad and lavahs bread held up really well over night.

IMG_0229

After a couple of minutes in the office toaster, the lavahs was brought back to its crispy deliciousness.

IMG_0231

I still have another half of the left over lavahs to enjoy again tomorrow. 🙂

The white bean salad had a chance to marinate in the dressing all night. It was even more flavorful than yesterday – if that is at all possible. 😉

IMG_0230

The two were best enjoyed as one.

Yum!

For dessert I had the last piece of Baklava.

So glad I brought all the left overs home. This lunch was almost as good as the fresh one I had enjoyed yesterday. All I was missing was the beautiful weather and al fresco atmosphere.

Earlier this morning I munched on a pear at my desk.

Time to get back to work!!

I have a special visitor coming tonight! I wonder who that may be?!? 😉

As a college student, I eat SO many meals consisting of leftovers. I try to get creative with it but sometimes I like ’em the way they are. Can’t wait to have a family to feed 🙂

You know what I love about you?? How you waste no food!!! My roommate is always wasting food and it is soo annoying.. I need to refer her to your bloggie 🙂

3 Heather February 23, 2010 at 2:27 pm

i’m excited to see the visitor! sounds like an awesome lunch…way to save the leftovers for another fabulous meal!

4 Evan Thomas February 23, 2010 at 2:29 pm

Leftovers never seem to be the same but these look perfectly fine, too 🙂

5 theprocessofhealing February 23, 2010 at 2:29 pm

Very curious about your visitor… Derek?!

So jealous of your lunch too. I love leftovers.. I know a lot of people hate on them but there are so many things that are just better the next day 😀

6 Maria February 23, 2010 at 2:44 pm

I’m guessing Derek, too!!

7 foodfitnessandfreya February 23, 2010 at 2:49 pm

Don’t you sometimes find that ‘old’ food tastes better when it’s been left!? The flavours infuse, it’s lovely 🙂
Have a good evening!

8 Christie @ Honoring Health February 23, 2010 at 2:58 pm

Great looking lunch.

I bet it’s Derek, too 😀

That lululemon bag makes a great lunchbox! I love leftovers and will usually cook a little more than I need to in order to have enough for lunch the next day. Soup and chili are especially more flavorful when they have been “marinating” in the refrigerator over night!

10 Morgan @ Life After Bagels February 23, 2010 at 3:01 pm

I almost always pack leftovers for my lunches. Then you don’t have to think in the morning really about “packing” a lunch. Just throw some leftovers and some fruit and a bar in your lunch bag and you’re good to go.

the white bean salad looks even MORE delish! What a perfect complement to the warm crusty bread 😉

Leftovers make the best lunches because they’re so hearty! I had leftover lamb stew for lunch today!

17 Emily February 23, 2010 at 3:49 pm

I’m always so impressed with your portion control! I can’t believe you still have more lavash left. I definitely would have eaten it all by now…

18 eaternotarunner February 23, 2010 at 4:00 pm

Looks delicious! Sometimes leftovers just hit the spot 🙂

19 Madeline - Greens and Jeans February 23, 2010 at 4:09 pm

I start getting excited for leftovers while I’m eating the “original” meal!

20 Whitney @ Lettuce Love February 23, 2010 at 4:36 pm

I love when I get the craving to eat the exact same meal from the day before. There is something so comforting about doing that — you just know you are going to have a good meal 🙂

21 Anna February 23, 2010 at 4:54 pm

Yummm…meals like that are almost always better the next day, once the flavors have melded!

22 Lisa (bakebikeblog) February 23, 2010 at 4:57 pm

Leftovers are key! To save money while in Australia, I’m making most of my meals in the hostel kitchen — this morning, I made a big pot of rice, beans and veggies and will be able to eat that for several meals this week.

28 retta @ runrettarun February 23, 2010 at 7:44 pm

I typically do leftovers for lunch. It saves money and I hate waste!

I guess Derek is your special visitor!

29 Gabriela (froyolover) February 23, 2010 at 7:54 pm

My husband and I are huge fans of leftovers … well, him especially since he complains of NOT being able to put any of the food in our cupboards together for a proper lunch. How I manage, I’ll never know! LOL!
