A Secret Visitor

Did you guess my secret visitor? ๐Ÿ™‚

Its Derek!!!

He made the drive all the way from Tampa just to have dinner with me. How cute is he?

Since he did make the long drive just to have a taste of my home cooking, I tried not to disappoint.

I made a simple stir fry of tofu, eggplant, broccoli, zucchini, yellow squash, mushrooms, and onions with a homemade sauce of apricot preserves, vinegar, ginger, and soy sauce.

Hidden underneath all those veggies is brown rice. ๐Ÿ˜‰

Hopefully they plate of food was worth the trip.

For dessert I had a serving of peppermint ice cream and a candy cane joe joe.

This afternoon I had a Crunchy Peanut Butter Granola Bar on the way to my doctor’s appointment.

I love my doctor. I was in an out in 20 minutes and felt like she really listened to what I had to say. ๐Ÿ™‚ Good doctors are so hard to find and I left with a smile knowing I had found one.

I absolutely love peppermint ice cream and have been dying to try the candy cane joe joes!

I think your stir-fry looks amazing, but i’ve never tried Tofu. How would you explain its taste? Any recommendations on a kind to try for the first time?

Peppermint ice cream sounds amazing right now. It is SO hot here — might have to splurge on a smoothie in a bit. ๐Ÿ™‚

What a fun surprise! I hope you two have a nice night together! Your stirfry looks delicious. Have you tried making a sauce with almond butter? It is so delicious, especially with chicken. I usually have a mixture of almond butter, soy sauce, lemon juice, sesame seed oil, and whatever else looks good.

It’s SO sweet of him to make the drive for dinner! (Truth be told, the stirfry looks so good that I’d make the drive for dinner too ๐Ÿ™‚ ) I love using jam/preserves in sauces. It makes me feel less guilty for having a million jam jars always on the go.

Tell me about it, my family used to have one who wouldn’t believe my Mum when she said she was having a detached retina- so she ended up near blind in one eye ;( My advice would be to look for the younger doctors, they now have to go through so much communication skills training, and are actually taught to listen that they aren’t any better than the patient now as opposed to training in the dark ages. I only hope I end up being one of those good doctors!

I’ve mostly been watching curling and some hockey/ski events. My boyfriends brother in law is on Team Canada for curling so we’ve been watching every game.
It’s insane how some people get there and then fall or get hurt before they really get a chance to show their stuff. It’s sad since they put so much work into it to have it all gone in a few seconds.

I love my doctor, too. I wish she was closer, though. I have to drive from my home in the country to downtown of the big city, which is kind of a pain. And pay for parking which used to be free until recently. Boo!
