I Love Saturdays!

For once its a beautiful morning outside and I am not stuck behind my desk or traveling from one destination to another. Woo hoo! I love Saturdays! Especially Saturdays that are as beautiful as today is. πŸ™‚

I have plans for a 10:00am run this morning, so I had the opportunity to sleep in at my leisure. I woke up naturally around 7:30am and got right to work making a killer breakfast.


Again, I love Saturdays! Not only do I have the opportunity to enjoy the beautiful day outside, but I actually have time to put together a grand meal I wouldn’t typically have time for during the week. This morning I spent the extra time preparing a long time favorite – french toast.


I stick with a simple recipe for my french toast. I make a bath of egg white, cinnamon, and vanilla extract. I dunk the two pieces of bread in the bath and then heat on the griddle until done.

For the topping I combined plain yogurt and preserves and topped with dried cranberries and flax seeds. Loved this combination!


With some grapes on the side.


Time to gear up and head out. I’m meeting Caitlin for a ‘hardcore trail run’ (her words) followed by a picnic in the park. Should be fun!

I know what you mean re photos – I woke up this morning and it was stunning, took a photo..and it looks so average! Frustrating πŸ™

It looks so pretty! Can’t wait to see how the trail run goes! That’s a race I’d love to do, but kind of scared to do. I’m afraid it will just be so bad on my ankles that I’ll get injured haha.

It’s a beautiful day here, too, though still chilly. But, I think people can feel Spring in the air!

Your french toast is pink. That is highly awesome. It’s a beautiful day up here in North Carolina, too–so happy that the cold that creeped down south is gone (at least for now)!

So I have a random question/problem. From your pictures and story, it seems like you began to lose weight as soon as you started working out and eating better. I’ve been working out and eating a lot healthier for about a month and a half, but I haven’t lost any weight OR inches. I’m doing a run/walk thing at least 4 days a week. What’s the deal?! I’m getting so frustrated, and I don’t know who else to ask!

I’ve never made French toast with just egg whites and not the whole egg before. Is it… yummy… that way? Haha.

That fresh toast looks great! Maybe I’ll make that for breakfast tomorrow. I never thought of mixing preserves with yogurt – I’ll have to try that!
