I have become good friends with the vegan baker in my office.
He loves to experiment in the kitchen with new recipes and baking techniques. And I enjoy eating those experiments and critiquing the new techniques. Its a win-win.
This morning he presented me with another fun, vegan creation – a Vegan Chocolate Peanut Butter Cup. Yum!
This is actually a smaller version of a larger cup he had experimented with a few months ago (which I had tried and loved).
The little cup was mostly peanut butter and had a nice crunch to it that I appreciated. I would say my only complaint was the lack of a chocolate bottom, but besides that an A+!
I enjoyed my original snack of grapes with the peanut butter cup.
My lunch was a tad boring, but really delicious.
Basically I just combined all of the left overs from last night into one bowl, heated it up, and enjoyed!
Food is so boring spread out on the plate. Its much more fun to mix all the flavors together.
Remember this beauty?
That my friends is the lovely cake ’Here Comes the Sun’ that my teammates Linda from Salty Seattle, Katharine from Smokey Mountain Cafe and I constructed last week under the supervision of Buddy from Cake Boss and Kelly Ripa in Kelly’s Cake Off For a Cause.
I’ll admit our cake may not have been the prettiest cake, but I think it has character and was assembled with lots of love and laughter.
If you love this cake as much as I do, then please head over to Kelly Confidential now to vote for this baby. It’s currently in last place and needs your help. Remember for every vote cast Electrolux has pledged to donate $1 to Ovarian Cancer Research Fund!

Today is the last day to get your votes in! So, please head to Kelly’s Cake Off For A Cause now and help make a difference by showing ‘Here Comes the Sun’ a little love. Voting takes 2 minutes. That’s it. Two minutes and OCRF is one step closer to finding a cure. What do you have to lose?

That pb cup looks delicious! It reminds me I have 1 left in my fridge(I didn’t make them vegan, though). But nothing beats a good dessert you didn’t have to make for yourself

Two of my fave foods in one….
I would love if my coworkers brought in vegan treats…but I highly doubt that’s ever going to happen
And did you get your vest at ny&c, too? It looks so cute on you!!

I voted for your cake! great job making friends with the vegan baker, that peanut butter cup looks awesome!
Would your vegan baking friend be willing to share his recipe for those delicious looking PB cups????

Do you think your co-worker would be open to sharing his peanut butter cup recipe?? It looks so good!
I second Emily’s comment!! I’d loove that recipe. It’s so nice finding people to connect with on unusual things, especially at work since you spend so much of your time near those people.
I third Emily and Catherine haha I’d LOVE that recipe!
YUM! vegan pb cups! what happened to you answering all the “Ask Me Anything!” questions?
YUM! Being a taste tester is a tough job…but someones gotta do it
Another great lunch bowl! I keep forgetting to vote- yikes! Going now. I really love your hair that length and your makeup looks super pretty! Hope you have a good weekend
AH! I love kelly rips and buddy from cake boss! how cool! I think the cake is really cute!
PB cups are my favourite! It’s funny though – after making them on my own a few times, it’s hard to go back to the processed Reese kind. I might have to try the Kind diet’s version to see if I have a winner.
