Hopeless Romantic

by Meghann on February 18, 2010

Call me a hopeless romantic, but I thought Valentine’s Day was a really great ‘cute’ movie. I mean an all star cast, shirtless men, an overall theme of love… what’s not to like?

Well.. there was Taylor Swift’s acting skills, but it was her first movie so I’ll give her a break. :)

If you are a fan of Love Actually and need a good laugh then go see Valentine’s Day! Or at least rent it in the future. :)

Before I met my sister at the theater earlier this evening I had just enough time to throw together a healthy, delicious meal.

I realized today it had been a while since I had last made mashed sweet potatoes.

Instead of boiling the sweet potatoes before mashing them, I steam them. I find that steaming my potatoes is easier, takes less time, and creates a mushier potato. And instead of milk, I used plain yogurt.

The tofu was pre-seasoned and pre-baked (thanks WildWood!) so all I had to do was throw it on the stove top for a couple of minutes just to heat it up.

My favorite part of my plate had to be the steamed kale, apple, and red onion.

There is something about the combination of kale and apple that goes together so well. :)

After the movie my sister and I went to my favorite frozen yogurt place – Sweet! – so that I could use the free frozen yogurt coupon I received for my birthday.

Usually I order their tart frozen yogurt, but when Kelly ordered the cookie & cream I knew I wanted the same.

For my three toppings I went with reeses pieces (another Kelly inspiration), strawberries, and graham cracker.

My snack this afternoon was a strawberry Oikos & cereal.

Doesn’t the Oikos container photograph beautifully? I’m really digging the natural light from the window by my desk. :)

It is wayyyy past my bedtime! Yikes!

Good Night!!

Oh and p.s. I have a FUN announcement in the a.m! ;)

Pita Tacos

by Meghann on February 18, 2010

Thank you for all the kind words regarding my co-worker’s missing dog, Scooby. He was very touched by the response and has looked into some of your suggestions. Please keep Scooby and my co-worker in your thoughts as we cross our fingers for a quick reunion for the two of them.

I’ve been hard at work playing travel agent all morning. Fun stuff. Part of my job consists of booking flights and hotels for some of our VIPs for our annual user group conference in April. I’m hoping to have all 50+ people registered and confirmed before March 1st, so I am getting down to the wire!

Mid-morning I snacked on a homemade trail mix.

IMG_9900

This is a random trail mix of nuts, cereal, and dried fruit that I make a big batch of every week and just take a 1/4 cup serving of for a snack throughout the week. Its much more economical and fun to create your own trail mix because you get to decide what goes in it.

I still have refried beans left over from my dinner on Monday night that needed to be incorporated in my lunch today. So far the refried beans were a burrito filling and a salad topper – today they made another dbut in the form of tacos. :)

Well pita-tacos since I didn’t have any taco shells. Actually, the pita made a great taco shell replacement.

I filled each pita with a mix of

  • refried beans
  • cheese
  • tomato
  • spinach
  • salsa verde (El Paso brand since a couple of you were asking)

With a side of fresh snap peas that I ate like fries.

For dessert I had a piece of my Valentine’s Day Godiva Chocolate.

Tonight I have plans with my sister to see Valentine’s Day the movie. I’m one of those people who enjoys predictable romantic comedies and am generally looking forward to this movie. Complicated movies with plots that twist and turn are so exhausting to watch, sometime a little fluff is what your mind needs.

What kind of movies do you enjoy?

I’m a stereotypical girl. I love romantic comedies, happy endings, and musicals. :)

One Gorgeous Day

February 18, 2010

Good morning! The sun is shining bright, there is not a cloud in the sky, and the high today for Orlando is 61. What the hell am I doing inside? Oh yeah, there’s this whole job thing. Gotta make that $$ somehow! It pretty chilly out this morning, but I gritted my teeth, bundled  up, more »
