A Back of the Box Meal

Looks like my secret jar of almond butter is running low.

I see a ‘in a jar’ creation in my near future. ;)

Luckily, I was able to scrape just enough AB for my snack this afternoon.

Tonight I had no idea what to make for dinner. I stood in front of my pantry for a good 10-15 minutes just staring at all it had to offer. Inspiration finally struck in the form of a box.

I followed the simple directions on the back of the box, only I bulked it up with extra veggies and some tofu.

Wildwood sent me some coupons a couple of weeks ago. LOVE their pre-baked tofu!

Who says healthy, delicious meals need a big production? Dinner came together in less than 15 minutes!

Just realized this recipe was suppose to produce 4 servings. I definitely was only about to get two out of it. One for tonight and one for lunch sometime this week. It was also meant to be a side dish. Personally, I thought with the extra veggies and tofu it was perfect as a complete meal. :)

For dessert I had a tiny bowl of mini peanut butter cups, dark chocolate covered edamame, and dried kiwi.

I enjoyed eating the dried kiwi with the chocolate mix. I still need to get around to making chocolate dipped kiwi. I can only imagine how great those would be. :)

Question: You eat so, so healthy. I know at one time you didn’t. So, do you ever miss fast food?

Sometimes, but not all fast food. I could easily go the rest of my life without ever eating at a Burger King, McDonalds, or any other burger place again, but fried chicken joints are a whole other story.

I love Zaxbys and used to eat there at least once a week when I lived in Tallahassee. Fortunately there isn’t one near me now otherwise I would probably talk myself into making the occasional trip there. I do still eat at Chick-Fil-A every once in a while. Though, I think the last time I ate there was the night I brought Maddie home back in August. Maybe I’m due for another trip?

Question: What is the average amount you spend on groceries per month? (Veggies and organic ingredients seem to be sooooo expensive)

Thanks to Mint.com I can tell you I spent exactly $293 on groceries in the month of January.

$293? Yikes!

That seems like a lot for one person for a month. I just can’t help myself when it comes to groceries. I love food and it’s the one thing I am willing to spend a little more on. I may not buy expensive make up, but I do buy fresh, healthy food each week.

And if you consider the $293 covers three meals and two snacks a day and that I rarely eat out during the week then it doesn’t seem to bad. :)

Question: Is it ever hard to know that your readers make certain assumptions about you and your lifestyle? (Not you in particular, but when you have a public blog, I’m sure it opens you up to a lot of scrutiny!)

Yes, it is hard. As much as I post about my life on the blog there are still parts that are private and people do intend to make a lot of assumptions. But, as you said it is a public blog and it really is to be expected. I just want to make sure people know that I am a real person and there are parts of my life that I would like to keep personal.

Question: How many minutes/hours a day do you spend reading health/fitness/food blogs? Or you could give a weekly average.

Hmmm… this is a toughie! I really have no idea. Maybe an hour a day? I’m a speed reader! :) I wish I had time for more though!

Good Afternoon!

Monday is just flying by! I think the 2 hour meeting before lunch helped with that. Meetings just make the days go by so much faster, especially if they are really great, productive ones!

Before my meeting I had a chickpea blondie which held me over surprisingly well.

Instead of feeling starved when the meeting let out, I still felt content and was able to do a bit of work before heading to a later than usual lunch.

Lunch was simple and delicious.

I meant to post this picture this morning, but I wanted to show what my new haircut looks like when I take control of styling it.

You like? I think its much better than the Miss America look from Friday.

Its a rare occasion where I take the time to do my make up in the morning. As you can probably tell I’m not very good at it. I spent 30 minutes at Ulta yesterday having no clue where to start. I bought a few items, but I’m not even sure what I bought matches my skin tone, etc.

Can someone just tell me what to buy that works for my face and how to use it? I feel like I am a lost cause at this point.

Question: How long did it take you to find your first “real” job after graduating from college?

I graduated from FSU in April of 2007 and found my first ‘real’ job as an Advertising Assistant at the local newspaper towards the end of July. I found the job via careerbuilder.com and went through three rounds of interviews before I was hired.

A year later when I quit and moved to Orlando I felt like I was starting at square one again. I got really, really lucky and after a month of living at home I had two great jobs offer. A couple of months ago I asked my supervisor why she hired me and she said it was because I was upbeat, had a great resume (I interned in college), and most importantly was willing to learn.

Question: What suggestions do you have for a young graduate who is trying to break out of the late night/binge drinking environment into the 9-5 world?  My concerns are portable lunches, exercising after work (I am NOT a morning person), and making smart choices at happy hour with my co-workers.  Thanks :)

I believe a routine is key when trying to adapt to the 9-5 world. I would suggest planning everything in advance and finding a schedule that works best for you. Since you are not a morning person I would try bringing your work out clothes to work and heading straight to the gym/ running area/etc. after work. If you go home first you will want to crash. Trust me.

I also suggest packing your lunch and snacks the night before. It’s very important to remember your snacks! Just assume you will be hungry in the afternoon and come prepared. Portable lunches are easy if you have an office fridge and microwave. Leftovers make great portable lunches as well as salads, wraps, sandwiches, or even a mish mosh of eats.

Happy hour with the co-workers is a tricky situation. I usually stick with the one drink rule and just slowly sip it. No one will even realize you are still on your first drink when they are on their second or third. You could also try mocktails and quietly ask the bartender for a club soda with lime.

I just have to pick one country? I want to visit everyone of them! I would like to spend my retirement traveling the world. I would go to England, France, Greece, Australia, Spain, Portugal…. I could go on and on here.

What can I say? I love to travel! I especially love to eat while traveling. Sampling the local fare of each country I visit would be a top priority!
