The Thursday Morning Drag

Talk about a slow day. I’m not sure about any of you, but it felt like my morning just kept dragging. So happy its finally the afternoon and we’re halfway through the day.

I broke into my snack of mixed nuts a bit early today out of boredom. I was staring down the clock and decided eating them would somehow make time speed up.

I’m pretty sure the nuts were gone in less than 60 seconds and I was back to staring at the clock.

Lunch also came around on the early side. I pretty much bolted out of my desk around 11:30.

You know what I’ve discovered lately? When ever I have left overs in the fridge I always ended up combining them together in a big bowl for lunch. I’m not sure if this actually constitutes creativity or pure laziness on my part.

In today’s ‘left over bowl’ I layered the last of my massaged kales, 1/2 a can of black beans that was in the fridge, last night’s roasted acorn squash, cheese, and salsa.

For dessert I had my last chocolate dipped dried fruit.

They will be dearly missed.

I love combining all leftovers! You can have two okay tasting things but together… they are amazing!
I’m impressed that those chocolate covered fruits have lasted so long! They look delicious!

Ohhhh I miss chocolate dipped dried fruit oh so much. I ate it all the time when I was London last year. My favorites are apricot, pineapple, and pears. Mmmmmm!

Those chocolate covered fruits so amazing! I always end up doing the same thing for my lunches too. Leftovers are just so easy.

I do my best “cooking” when I have leftovers, somehow the flavors all meld together into something delicious. Looks like a good lunch!

I think combining leftovers is the way to go – you can create some awesome new combinations that you wouldn’t normally think of! Your lunch sounds delish 🙂
Is that dried apricot? Baah, I love chocolate, but I wouldn’t touch that with a barge pole – I HATE dried apricot!! 😛

I just wanted to ask, do your co-workers/boss read your blog? haha Because you mention work a lot and about how bored or tired, or crazy busy you are, etc. and I was just wondering if anyone at your work as ever had a problem with your commentary of you job? I personally think its funny sometimes, especially now that you’ve compared your job to Chandler Bing, haha 🙂

You simply drizzle the fale with some olive oil, balsamic vinegar, lemon juice and salt and then refridgerate for at least thirty minutes. Its good! I promise!

I suffered from Thursday afternoon drag – my afternoon was full of meetings and I couldn’t believe it would ever end!

I am also “creative” and tend to dump a whole of of things into a bowl and call it a meal. My husband on the other hand, hates when different foods touch. I think he is the odd one!

I hear ya about this Thursday morning…. mine started off by my husband taking my keys with him to work, and my mother having to take me to work. OIY! Luckily, my day only got better from there. After all, could it really have gotten any worse? haha
