Tomorrow is Friday

As I was driving home from work this afternoon only one thought was going through my head – ‘Tomorrow is Friday!’ I’ve worked late every night this week and the weekend just can’t come fast enough!

This afternoon was a super busy one for me. I had a meeting that ran long and by the time I got out the only thing on my mind was the yogurt and granola waiting for me in the fridge.

Granola + yogurt = my lifesaver!

I think I polished the yogurt off in about 10 seconds flat. It was good and I needed the fuel. :)

There were a ton of left over cooked lentils in my fridge screaming to be made into something healthy and delicious. With a little help from a few fridge staples I was able to do just that.

Sloppy Joes!

Meghann’s Easy Lentil Sloppy Joes

  • Cooked Lentils
  • Carrot
  • Onion
  • Tomato
  • Ketchup
  • BBQ Sauce
  • Honey Mustard

In a skillet cook the onion, carrot and tomato until the carrots go soft. Then add the lentils and douse with bbq sauce, honey mustard, and ketchup until the flavor is right.

See, easy peasy!

When in a pinch honey mustard, bbq sauce, and ketchup are always my staple sauce ingredients. :)

While the sloppy joes were cooking on one side of the stove I had yuca steaming on the other.

I steam the yuca until it starts falling apart and then coat it with the tiniest bit of butter.

One big perk to my day was the new calendar I made in iPhoto that arrived this afternoon.

iPhoto produces the best calendars. They’re high quality, have great coloring, and look fabulous. After making one for a few relatives (and Derek) for Christmas, I had to make one for myself.

Its the perfect addition to my new space.

The quicker I get to sleep, the quicker tomorrow will come and the quicker the weekend will be here!

I have Chandler’s Job

Many people ask me what I do for my full time job.

Officially my title is ‘Marketing Assistant’ and I work for a software company that specializes in the K-12 education market. But that doesn’t tell you much, does it?

In reality I assist with the sales team, write internal and external communication for my company, help plan our company’s annual user group, coordinate tradeshows, and what ever other duties that need to get done – trust me I can go on and on here. ;)

My siblings like to say I have Chandler’s job because no matter how many times I explain it to them, they still have no idea what I do! :)

My job changes day to day and I have learned to roll with it. Marketing and communications are what I love to do and every day is a new challenge to conquer.

This morning I was actually a flight booking and hotel reserving machine. We have clients that are sort of like ‘VIPs’ at our conference (for a price) and we – meaning me – coordinate their travel arrangements.

Let me just tell you that coordinating travel for 50 or so people from all over the U.S. and Canada is a lot of work! I was kept very busy and the morning flew by.

I did take a mini break at 10:00 to nibble on the mixed nuts I brought for my snack.

And when lunch time came around I was more than ready to eat a big bowl of greens.

My beautiful salad had

  • massaged kale
  • sprouts
  • left over roasted veggies
  • tabouli
  • 1/4 avocado
  • tomatoes
  • hummus
  • crumble pita bites

I love the way hummus coats salads and make everything in them taste extra creamy and delicious! :)

For dessert I snagged one addicting Almond Butter Chocolate Chip Cookie

And now I’m stuffed. Great lunch and dessert!

What job do you have? Or better yet, what is your dream job?

Mine has always been to do marketing for Disney World! But now I think it would be fun to do marketing and event management for big races like NYC or Boston! :)

Double Dose of Bulgar
