Taco Night

Work, Work, Work.

After not leaving my desk all afternoon my sanity was in desperate need of some chocolate. Lucky for me a few of the Almond Butter Chocolate Chip Cookies I had packed this morning were just what I needed. πŸ™‚

Cookies make the best snack, wouldn’t you agree?

Good for your body (whole grain, low sugar, healthy fats) and good for your mind (chocolate!). πŸ™‚

It was Taco Night in casa de Meghann!

Cha Cha Cha

Kale massaged with olive oil, balsamic vinegar, and sea salt was the base of my lovely taco salad.

The kale was then topped with lentils heated up on the stove top with onion, mushrooms, corn, and a quick taco seasoning mix of chili powder, garlic salt, oregano, and pepper. And finished with 1/4 of an avocado and salsa.

A toasted flat our took the place of traditional tortillas.

I was still craving chocolate when it came time for dessert.

I rounded out my Mallory Oh with 1/2 a kiwi. Its all about balance, right? πŸ˜‰

Speaking of the morning, I have a wonderful 6 mile run planned and I can’t wait! I thought I would feel burnt out from marathon training, but I miss my longer early morning runs. I also may have some crazy news to share with your guys early next week regarding running, so stay tuned!

I had taco salad tonight too but it was out and homemade is WAY better! Especially with those flat out pita chips! πŸ™‚

The avocado looks AMAZING and makes me want to have some ASAP. Good luck on your run. I am aching to get back since my marathon, but forced to take things slow due to my IT band πŸ™

I tried once to toast a tortilla in my toaster oven and it became a flaming disk in there and ruined my toaster oven and almost burnt down my brand new kitchen-NOT GOOD. Did you toast yours in the oven?

Love the balance with the fruit and chocolate. Which is why on Monday I am getting lots of fruit….on top of my delicious fro-yo. Balance at it’s tastiest. πŸ˜‰
