Work, Work, Work.
After not leaving my desk all afternoon my sanity was in desperate need of some chocolate. Lucky for me a few of the Almond Butter Chocolate Chip Cookies I had packed this morning were just what I needed. ๐
Cookies make the best snack, wouldn’t you agree?
Good for your body (whole grain, low sugar, healthy fats) and good for your mind (chocolate!). ๐
It was Taco Night in casa de Meghann!
Cha Cha Cha
Kale massaged with olive oil, balsamic vinegar, and sea salt was the base of my lovely taco salad.
The kale was then topped with lentils heated up on the stove top with onion, mushrooms, corn, and a quick taco seasoning mix of chili powder, garlic salt, oregano, and pepper. And finished with 1/4 of an avocado and salsa.
A toasted flat our took the place of traditional tortillas.
Yum!
I was still craving chocolate when it came time for dessert.
I rounded out my Mallory Oh with 1/2 a kiwi. Its all about balance, right? ๐

Speaking of the morning, I have a wonderful 6 mile run planned and I can’t wait! I thought I would feel burnt out from marathon training, but I miss my longer early morning runs. I also may have some crazy news to share with your guys early next week regarding running, so stay tuned!
