by Meghann on January 15, 2010

Today’s snack is brought to you by the lovely Monica of Run Eat Repeat.

I had the pleasure of meeting Monica for the second time this past weekend when we were both running the Disney Marathon.

(By the way Monica ROCKED IT! Check out her race recap HERE πŸ˜‰ )

Anyways, Monica was kind enough to bring me a goodie bag of Trader Joe treats all the way from Maryland. The star of which was this delicious bag of Dark Chocolate Nutty Bits (not to be confused with dark chocolate naughty bits hehe )

I started with a 3 piece serving for my afternoon snack.

But they were sooooo good I happily went back for two more.

Nom Nom Nom

Thanks Monica!!!!

My afternoon mission to find a hot tub was major fail. πŸ™

I went to three other apartment complexes and two hotels. Both the hotels needed hotel keys to get to the pool area and the one complex I found with a hot tub was cold. However, tomorrow is another day and I will not give up!

I had a ton of random left overs in my fridge to use up for dinner. While I was on my hot tub mission my idea of what to turn those left over into for dinner kept snowballing out of control until I ended up with this tasty crazy concoction.

It was my take on fried rice.

In a pan I sauteed shredded cabbage, mushrooms, asparagus, and tomatoes until all the vegetables were soft. Then I added left over rice and pumpkin spice chickpeas. I pushed everything to the side of the wok and fried an egg before combining it all together. I finished it off with a dollop of hummus and sesame seeds.

IMG_6308.JPG

The hummus, might sound odd, but if you close your eyes once the hummus is mixed in with the fried rice it tastes almost like the yummy shrimp sauce they give you at japanese steak houses!

The combination was really tasty and took less than 10 minutes to put together.

I was really craving fruit for dessert, so I filled a small bowl up with strawberries and topped it with a scoop of tart frozen yogurt and granola.

The strawberries really hit the spot. πŸ™‚

So far my plan for a lazy weekend is off to a raging success. It is now 8:02 pm and I am already contemplating going to bed. I know – I’m a cool one. I’m just soo tired, my bed is calling my name!

Good Night!

I saw those in Trader Joe’s, then on Monica’s blog(she’s awesome) and now I think I need to buy a bag. I bet they would be amazing tossed into the food processor and made into a butter.

11 Gina January 15, 2010 at 10:40 pm

Did you try looking for a gym that has a hot tub? You may be able to get a free day pass. I love Trader Joe’s but haven’t tried the Nutty bits yet, they look good though!

12 biz319 January 15, 2010 at 11:11 pm

Do not give up on the hot tub! You will succeed!

I totally hear you on calling it an early night. I’m trying to hang, but it’s not working too well.

I bought those deletable chocolate nutty bites @ TJ’s before the holidays and devoured them. Hope they’re not a seasonal thing ; )

Hi Meghann!

My husband and I lived in Thailand for 10 months teaching in Chiang Mai and of course loved all of the Thai food we ate. For Christmas we got a wok so we’ve been into the Asian flavors lately. I’m attaching 3 links (blog posts) for different Asian dishes that come pretty close to what we ate while living there.

Like you said, these are easy to make and I love the one-dish aspect of them. Hope you enjoy πŸ™‚

Such a pretty bowl! Mind if I ask where it’s from?

23 foodfitnessandfreya January 16, 2010 at 4:23 am

Oooh I saw them on Monica’s blog too – I bet they’re real easy to make at home πŸ™‚
Your dinner looks great, I love random combos being thrown together and then you get a new fantasic meal!

24 Morgan @ Life After Bagels January 16, 2010 at 7:51 am

I love that you’re on a hot tub mission, too funny!

25 Juli D. January 16, 2010 at 10:00 am

Why not try to go to a gym with a hot tub and test out the facility? Most places will let you have a trial go for free – you just might have to talk to someone and act interested in the gym info – but you’d get your hot tub!

26 Rachel January 16, 2010 at 10:49 am

Just another reason why I wish there was a trader joe’s near me πŸ™

27 Lindsay M January 16, 2010 at 11:39 am

I am a runner and I also do not like the Bondi Bands at all for runs!!!

28 Becca January 16, 2010 at 3:51 pm

OMG those made my mouth water! I have GOT to find a Trader Joes somewhere I can go! I always see all these delicious looking things!
