My Secret Jar

What’s that in my drawer?

Why, its a jar of almond butter!

Who doesn’t keep almond butter in their drawer? It’s very convenient for days when you bring some orange slices as a snack and realize you need something a little more substantial.

It’s also great when you are looking to spice up a plain ole tootsie roll. :)

For dinner I wanted a full, delicious meal.

I started by marinading some tofu in a yummy apricot sauce.

I baked the tofu at 420 for 60 minutes alongside a sweet potato.

Usually I microwave sweet potatoes, but I was oddly inspired to actually bake one in the oven this evening. It’s amazing the difference between a potato baked in the oven and one baked in the microwave. :)

Throw in some steamed asparagus and jalapeno cornbread and I had the complete meal I was looking for. :)

Melissa was kind enough to bring me some Candy Cane Joe Joes all the way from SoCal!

I had two with a handful of strawberries for dessert.

Mmm… Candy Cane Joes Joes are delicioso!

After a couple frustrating hours or getting my garmin to connect to my computer, I was finally able to upload my splits from that marathon yesterday.

These numbers make me happy. :)

You can definitely see where I really slowed down around mile 20, but I am very proud of my sub-9:30 pace below that. :)

It’s really fun to compare those numbers to my last marathon.

I averaged almost a full minute faster per mile at my marathon on Sunday, compared to my marathon last May. Pretty crazy, right?

I plan to do a whole post in the near future on marathon training and my experience this time around compared to my previous marathon. I have some interesting musings I want to express.

Tomorrow morning I have a little treat for you, but you will just have to wait to see what that is. ;)

I’m Hungry!

This morning I was complaining about the post-marathon pain, now I shall discuss the post-marathon hunger.

My stomach barely lasted until 9:00 am this morning before it started screaming ‘I’m Hungry, I’m Hungry”

I listened to my stomach’s screams and fed it ½ a blueberry scone that I had purchased from Whole Foods on Saturday.

Then, I was stuck in meetings the rest of the morning. I’m surprised my co-workers didn’t hear the loud growls coming from my stomach. I was very close to eating the paper on my table, but managed to abstain. As soon as the meeting let out, I sped home for lunch.

I quickly threw together a bowl of left over chili with some added cous cous, plain yogurt, and some onion for a little bulk.

On the side I had 1.5 pieces of cornbread.

The meal filled me up for the time, but less than two hours later I’m already considering breaking into my afternoon snack. After my last marathon I had to force myself to eat because the hunger never returned, but after this marathon its back with a vengeance! I guess it just goes to show every marathon is different. :)

Guess Whose Coming to NYC?!?!?

In an effort to raise awareness for the Ovarian Cancer Research Fund, whose mission is to fund research to find a method of early detection and ultimately a cure for Ovarian Cancer, Foodbuzz has partnered with Electrolux and have selected 15 of their featured publishers to join Kelly Ripa for a special cake decorating eventin New York City. I feel honored to have been selected as one of those 15!

This event takes place around my birthday (February 8th) which means I will be ringing in my 25th year under the big lights of NYC. It should be a great trip for a great cause and I can not wait to blog all about it!

I hurt!

Well, my legs hurt… and my back. I got out of bed this morning and my legs instantly reminded me of the 26.2 miles I ran yesterday. Luckily as of right now they just feel very tight and sore. So far no major injuries that I can pinpoint and I am very happy for that more »
