I need to invest in some light bulbs ASAP!
Between my living room and kitchen light fixtures, I currently have 6 light bulbs out. Let’s just say its a wee bit dark in here.
My apologies for the low lighting situation. I see a trip to Target in my near future.
Dinner was a little experiment that didn’t go exactly as planned, but still came out tasty.

The goal was to make mini taco shell bowls using corn tortillas and a muffin pan. However, my corn tortillas were a bit past their prime and broke apart as I tried to form them to the muffin pan. I improvised by splitting a Flat Out wrap in half and making do.

The taco shells went under the broiler for 10 minutes. I was pleasantly surprised how well they held their shape.

I stuffed each shell with spinach, black beans, salsa, and plain yogurt.

They came out pretty tasty and were fun to eat with my hands.
On the side I had broiled some carrots with the shells

Take that Drive Thru Diet.
Before I left work I snacked on a mini bag of kettle corn.

And dessert was a special treat courtesy of my dear friend VeggieGirl (Liz).

Could anything be better than a chocolate coated cookie? I think not!

Those cookies look delicious! Trader Joe’s was selling dark chocolate covered peppermint Joe-Joe’s for the holidays, but I think I missed the chance to grab those

Don’t forget to get halogen bulbs — they look the same as regular bulbs, last forever and bring your electric bill WAY down!

You know, I just have bad lighting in general in my apt. It is really annoying. I have to take all of my food pics under the stove hood light. Adam and I a redoing the house we just bought and we are making sure to have good lighting!

Your dinner looks SO good! I tried to toast some tortillas once in the toaster oven-NEVER DO THAT. I nearly burned my house down. It turned into a flaming disk-INSANITY.

Chocolate covered cookies are my FAVORITE! Oh, the wonderful memories of eating those when I was a little girl…AND the improvised taco shells are an awesome idea! Thanks for all of the cook recipes you always post, i’m moving to China and will DEFINITELY be using some of them in my own cookin!

Malley’s is THEE chocolate of preference in these parts, as the headquarters are here in Cleveland. I can’t tell you how many boxes of Malley Ohs I have sold for school fundraisers over the years! They are fantastic!

What do you think is the tastiest way to have brussel sprouts? I am trying to try a new veggie or fruit each month of this year and i have never tried brussel sprouts, nor do I know how to prepare them….I’ve seen you bake them before, do you add spices or just throw them on a pan?
