Light Bulbs

I need to invest in some light bulbs ASAP!

Between my living room and kitchen light fixtures, I currently have 6 light bulbs out. Let’s just say its a wee bit dark in here.

My apologies for the low lighting situation. I see a trip to Target in my near future. :)

Dinner was a little experiment that didn’t go exactly as planned, but still came out tasty.

The goal was to make mini taco shell bowls using corn tortillas and a muffin pan. However, my corn tortillas were a bit past their prime and broke apart as I tried to form them to the muffin pan. I improvised by splitting a Flat Out wrap in half and making do.

The taco shells went under the broiler for 10 minutes. I was pleasantly surprised how well they held their shape.

I stuffed each shell with spinach, black beans, salsa, and plain yogurt.

They came out pretty tasty and were fun to eat with my hands.

On the side I had broiled some carrots with the shells

Before I left work I snacked on a mini bag of kettle corn.

My Candy Cane

As I began putting the Christmas tree away this morning, I realized I had gone the whole holiday season without a proper candy cane.

Had to fix that problem. ;)

I’m not that big of a fan of candy canes, but do like to enjoy one at least once during the holiday season.

With the candy cane, I also enjoyed some dried kiwi this morning courtesy of Oh! Nuts.

 

Love the dried kiwi! I think it tops the list as one of my fave dried fruits. :)

Lunch was amazing!

Brown rice topped with leftover roasted vegetables, hummus, and chia seeds.

Oh.My.God. YUM!

When it all mixed together the combination reminded me of the food concoction I always created when I got to a Japanese steak house and mix the fried rice with the veggies and the pink/white sauce. Except a whole lot healthier and – I dare say it – a whole lot tastier. ;)

In other news the current high for Sunday’s race is 49 degrees!!! Yikes! And when the gun goes off at 6:00am its suppose to be 28! I really, really, need to find out what I am going to wear on race day. This is going to be a toughie.

Frigid Temps
