I'm Home!

I don’t care how old I get my parents’ house will always be ‘home’ to me. ;)

The drive to my parents’ was thankfully uneventful. There was little to no traffic and the whole ride took me less than an hour.

I was starving when I reached my destination and immediately made myself a snack plate of carrots and cashew butter.

Apparently the doggies were starving as well.

Last weekend I had picked up some fancy christmas theme dog treats to give all the puppies for Christmas.

I had their full and complete attention.

After the puppies had their treats I got to work making some for everyone else.

Yesterday I had an idea for Chocolate Covered Peppermint Nut Clusters and had requested my parents pick up the ingredient so I could turn my idea in a reality.

Chocolate Covered Peppermint Nut Clusters

  • 12 oz bag Dark Chocolate Chips
  • 12 oz bag White Chocolate Chips
  • 2 cans Mixed Nuts
  • 30 Peppermints
  • Festive Sprinkles (optional)
  1. Unwrap all the peppermint candies, crush by pounding with a rolling pin, and set aside
  2. Empty the contents of the 12 ox bag of dark chocolate chip bag into a microwave safe bowl and microwave on high for 1 minute and 30 seconds
  3. Mix melted chips until you have liquid chocolate
  4. Pour in 1 can of nuts and 1/2 of crushed peppermints
  5. Mix well and spoon on to parchment paper
  6. Cover with festive sprinkles
  7. Repeat with white chocolate chips
  8. Refrigerate until solid

I waited until after dinner to sample one of the nut clusters. Delicious!

The nut clusters made a great addition to the homemade gift boxes I plan to distribute on Christmas.

The box also contained some easy peppermint bark I whipped up this afternoon.

I wasn’t the only one hard at work in the kitchen. My brother and sister were just as busy on the other side of the kitchen making some yummy Gingerbread Men!

None of us had made gingerbread men before. It was a fun experience :)

Tomorrow is Christmas Eve!!

We do Christmas Eve BIG in our family! We are having 40 people over tomorrow night for food drinks and good times. I can’t wait :)

I have a 10 mile run planned in the morning with my Sister and an old high school friend. It should be the start to a wonderful day.

Packing Before Blogging

2+ hours of gathering and packing later….

and I think I’ve got everything!

Its amazing how much hard work packing for 11 days is! Especially when you are going from one climate extreme to another and have to bring Christmas presents. I will just be happy when I finally walk through the door of my parents house and can put my feet up for a change. :)

Thankfully work went by pretty quickly this morning.

My co-worker brought in some home made christmas cookies and the christmas tree sugar cookie looked too good to pass up.

Homemade iced sugar cookies are 100 times better than their store bought counter parts. :)

My lunch was another delicious creation involving the last of anything fresh in my fridge.
