Getting Through my To Do List

I found a dog sitter for Maddie for next week!! :)

It was getting down to the wire and I was beginning to think that I would have to fork over $35 a night to put Maddie in a cold kennel for the week. Luckily, Ashley came through with one of her co-workers who is more than happy to watch Maddie for the week!

The best part is she literally lives 2 miles from my apartment and will be watching another friend’s boxer the same week. Maddie will have plenty of company to keep her busy while I am away. :)

Finding a dog sitter for Maddie was just one more thing I can happily cross off of my to do list.

I can also cross off restocking my supply of toilet paper, paper towels, and yogurt. Thank God!

I bought just enough yogurt to last the next couple of days and immediately broke into the supply as soon as I got it home.

Pumpkin yogurt (plain yogurt mixed with canned pumpkin and pumpkin spices) topped with granola and pom. Yum!

Unfortunately during my short trip to the store I failed to pick up any other food item besides yogurt. I am determined to eat my fridge before I head out of town.

So instead of putting together anything creative for dinner, I simply threw a hodge podge of left overs on top of spinach and called it a salad.

pumpkin spiced chickpeas, roasted potatoes, beets, swiss cheese, tomato, artichoke hearts, and olives drizzled with balsalmic vinegar

Dessert was a serving of egg nog ice cream with christmas pretzels

I love how festive the pretzels make my ice cream look. :)

One day of work down – two more to go! Yippeee!!

Office Visitors

Look who came to visit me at the office today

My lovely sister, Kelly, and twin brother, Josh, just happened to be in town doing a little Christmas shopping and decided to swing by and check out my work digs before heading to lunch together.

I was listing all the good places to eat around my work and when I mentioned Infusion Tea Kelly’s interest perked. She had never been before and was dying to try it. Even though I had just dined at Infusion Tea on Saturday, I had no problem going back today for lunch. :)

I decided to be a little adventurous with my meal and ordered the perogie

The perogi was a little different then I was expecting.  I always imagine perogies as a potato based ravioli, but this was more like a calzone stuffed with spinach and cheese .

When I got back to the office I raided the front desk’s candy stash for a sweet after lunch treat.

Sad News…

On Friday Nature Made announced the Good Mood Blogger and sadly I was not it. :(
