Long Run Preparation

by Meghann on December 18, 2009

My marathon training comes to a climatic peak tomorrow morning when at 6:00 am I plan to conquer the elusive 20 miler that has been staring at me since day one.

20 miles? Is it really that time already?!?! Ughh…

Come one Meghann! You can do this!!

At least those 20 miles looming over my head is as good excuse as ever to spend my Friday night sitting on the couch in my underwear watching Fa-la-la-la Lifetime and stuffing my face with delicious food.

Carb loading, right? ;)

I had a mini bag of kettle corn before leaving work.

Nom Nom Nom

I was at a loss on what to make for dinner.

In the spirit of carb loading my mind immediately went to a pasta or rice based dish, but both weren’t appealing to me at all. Instead I took some inspiration from one of my favorite bloggers and experimented with a recipe I have been meaning to try for a while.

Mama Pea’s Pumpkin Spiced Chickpeas

I can see what all the fuss is about – these chickpeas were great! They were slightly sweet, but not terribly overwelming. I bet they would pair well with some butternut or acorn squash. :)

Steamed Green Beans

And last, but not least, the CARBS

Roasted potato simply seasoned with a grilling season and paired with ketchup for dipping. :)

For dessert, a serving of peppermint ice cream topped with chocolate covered graham cracker, and some chocolate/peppermint/M&M pretzels.

I also made some a panful of Pumpkin Coconut Chocolate Chip Bars for a Christmas party I am attending tomorrow night.

I’ll have to try one tomorrow to make sure they came out right. Let’s cross your fingers!

Still can’t believe I’m running 20 miles tomorrow morning!

I have strict orders to meet my sister at her apartment at 6:00am to get our run on.

Yikes!

I guess that means I better go to bed now.

Good night!!

Spicy!

by Meghann on December 18, 2009

My mouth was on fire this morning!

IMG_3220

I had to down 3 full cups of ice water and chew on two pieces of gum before the heat even attempted to go away.

The culprit? This Thai Soup a co-worker brought in for us to try.

IMG_3211

Why so spicy? I believe it was the ghost chili pepper he used while making it!

IMG_3213

Ay Carumba!

This had to be the spiciest soup I have ever tasted. One co-worker said it would put ‘hair on my chest.’ I’m not sure about my chest, but my tongue feels a little hairy now. ;)

I only had a couple of bites of the soup before having to give up. But boy did those three cups of water sure filled me up afterwards. I felt like I would bust sitting at my desk. It also made for a lot of potty breaks all morning.

I had to run a few errands during my lunch break and ended up just eating at my desk afterwards.

My lunch in a bag consisted of:

Left over butternut squash and pear soup.

IMG_3228

Swiss cheese and spinach sandwich

and one of Melissa’s M&M oatmeal bars

^Best part of my meal :)

Check out what she gave me for Christmas this year..

December 18, 2009

In Florida we may not have snow, but we do have ICE! Every December Gaylord Palms transplants nearly two million pounds of ice to the central Florida area and transforms their ballrooms into an interactive hand-carved wonderland of ice. This is the seventh year of the exhibit, but my first of actually seeing it in more »
