Lots and Lots of Chocolate!

Between cooking dinner and prepping my homemade treats, it has been an exhausting evening in my kitchen! And I feel like I still have so much left to do. No better time for a blogging break. :)

I kicked off my ‘baking’ extravaganza with two recipes I found on MyRecipes.com for Peppermint-[Dark] Chocolate Slabs and White Chocolate – Peppermint Jumbles.

The original recipe for the chocolate slabs called for white chocolate, but I thought dark chocolate sounded more appealing. :)

The recipe was quite simple.

You start with two bag of chocolate chips.

Microwave the chips for a minute, stir, and repeat again for 15 seconds until the chocolate is melted.

While the chocolate is melting get to work on crushing a couple dozen peppermint candies.

Add the crushed peppermint and one teaspoon of peppermint extract to the melted chocolate.

Spread the chocolate in a wax covered pan and refrigerate over night!

Can’t wait to try this tomorrow!

Next up were the White Chocolate – Peppermint Jumbles!

This required ALOT of chocolate!

The recipe actually called for slowly melting the chocolate on low in a crock put for an hour and a half. In the absence of actually own a crock pot I tried heating it slowly on the stove top instead.

This recipe made dozen upon dozens of little jumbles that are now all over my kitchen.

Luckily I had a granola bar before I left work that kept me satisfied and prevented me from snacking.

Dinner was a no-brainer thanks to Angela’s recipe for Sweet Potato and Pear Soup I discovered the other day.

Only instead of sweet potatoes I used the butternut squash that has been on my counter for a while now.

The soup gave me a chance to use my new immersion blender.

I topped my serving with a spoonful of granola and a tablespoon of peanuts.

The pear gave the soup a very interesting taste. It was very sweet, but very good. I think next time I would add a little curry to it or maybe some nutmeg for a little spice. :)

Since none the fruits of my labor were ready for sampling after dinner, I had a view nibbles of the fruits of Melissa’s labor instead

Its not Thursday, Its Wednesday

All morning I have had it in my head that its Thursday when clearly it is Wednesday. Such a sad realization.

My head is one day ahead and I need to bring it back to reality.  ;)

Luckily, my Wednesday hasn’t been that bad thus far.

Midmorning I snacked on a 1/4 cup of a mixed nuts trail mix.

For lunch I enjoyed a delicious tofu/ pesto combination I had prepped this morning.

My combination included

  • Cubed Tofu
  • Pesto
  • Plain Oikos
  • Mushrooms
  • Artichoke Hearts
  • S& P

I stored the combo in the fridge and at lunch added it to a wrap with some spinach.

The combination reminded me of an egg salad with pesto. It was delicious but missing a seasoning of some sort. Perhaps fresh thyme or basil would have been the key to break every thing together. ;)

On the side I enjoyed a mini pickle and a chopped carrot dipped in almond butter.

The chocolate dipped fruit were part of a Thank You gift from the people at Oh! Nuts for hosting a giveaway the other week.

Wow!

I mean really – Wow! I can’t recall having chocolate dipped fruit in this form before and I really, really enjoyed it. I was also sent a pound of dried kiwi that I believe I will be replicating this concept with in the very near future. ;)

I am on a mission tonight to produce some homemade Christmas presents for co-workers, neighbors, and other random acquaintances. I already have a couple ideas in my head of what to make – the chocolate dipped kiwi was just added to it! – but was curious if anyone had any ideas of what would be easy to ship or package as a homemade treat?

I already have peppermint bark and white chocolate jumbles on my mind and am considering doing a homemade holiday dog treat as well. Any other suggestions are welcomed!

Easy Peasy
