I came home this afternoon to two very exciting packages!
The first was from the lovely Adriane; whom I had the pleasure of meeting this past August at the Healthy Living Summit.

Adriane had noticed my longing for an immersion blender in my Christmas Wish List post a couple of weeks ago. She just happened to have an extra one lying around and was kind enough to send it to me along with some other goodies.

The second was my annual assortment of baked goods from Melissa.


The package was addressed to both Caitlin and myself.

Caitlin – you need to come over and pick up your half before I eat them all myself.

Rewind to earlier this afternoon when I enjoyed a lovely snack of carrots and almond butter.

Fantastic.

The thought of cookies for dinner was a tempting one, but the idea of a real meal followed by cookies for dessert an even better one.
A traditional Mexican inspired burrito was on the agenda for dinner tonight, but after finding my fridge free of salsa and black beans I decided to take a more creative route working with what I had on hand.

Introducing the Italian Burrito.

Soo… Sooo… GOOD!
I stuffed a flat out wrap with goat cheese, pesto, tofu, mushrooms, and artichoke hearts.

I rolled the burrito and topped it with some marinara sauce and flax seed. Baked at 350 for 15 minutes.

The italian burrito was amazing! I think it was the pesto and goat cheese mix on the inside that took it over the top.

I paired my burrito with some steamed green beans.

As promised I had a bit of each of Melissa’s cookies for dessert.

Yummy!! I loved them all.
If you follow me on twitter then you will know my DVR has been giving me issue the past week. It was only recording 5 minutes of shows at a time and just wasn’t cutting it anymore. I exchanged it this afternoon and now have a fully functional DVR again. Woo Hoo!
There’s just one problem… all my presets are now gone!
I guess that means you know what I’ll be doing this evening – trying to remember what shows I was recoring and putting them back in the queue.

I am with the philosophy that you can put goat cheese on pretty much anything and it will be good.
We love our immersion blender so much, I just splurged and got the fancy Cuisinart one.
