Swapping Rest Days

by Meghann on December 4, 2009

Good Morning Lovelies!

I have a product kick off meeting to get to at 9:00 am and need to make this quick!

I traded in my usual Friday rest day this morning for a 4 mile run. The run was originally planned for tomorrow, but due to the early start of my family’s christmas caravan I knew I wouldn’t have time.

The 4 miles was great. It was pretty cool and a little rainy – perfect running weather.

Last night I had prepped a bowl of overnight oats that was waiting for me when I finished making myself pretty.

My overnight oats consisted of

  • 1/2 cup of Oats
  • Plain Oikos
  • A big scoop of Almond Butter
  • Crushed Hazel Nuts
  • Raisins
  • Cinnamons

I topped my oats with 1/2 an Apple, a touch of Cranberry Sauce, and a sprinkle of Flax.

Perfect.

I have a question about overnight oats – do you cook them?? Or are they quick oats mixed with everything and put in the fridge overnight and heated in the morning? They look so good!

I can never get overnight oats right, but yours look super yummy after you added all the toppings.

Hey–what is your job?? I saw you were talking about pasta–is it related to food? You’re SO lucky you can go home for lunch too!

Those oats look amazing! I have a question about overnight oats….do you typically eat them cold, right out of the fridge? Or do you heat them up in the microwave? Just curious! I have not tried overnight oats that are cold, I just can’t part with the warm stickiness!
