Traffic Blows

Why did I think it would be a smart idea to go to the mall after work?

Getting what I needed in the mall took 10 minutes, but being stuck in traffic each way took well over an hour. Ughh.. not fun.

I returned home hungry and cranky. It was a good thing I already had a plan for dinner. ;)

I had randomly picked up some Red Cabbage this past Sunday. I made the purchase with no clue what to do with it, so I spent the afternoon googling ideas. I stumbled upon a recipe for Tassajara Warm Cabbage Salad on 101 Cookbooks that looked easy and delicious.

I loosely followed the recipe making slight substitutions here and there with what I had on hand.

The results were amazing! The raisins added a nice sweetness and the seeds gave a great crunch. I highly recommend this recipe to anyone looking for something easy to do with red cabbage. :)

As you may have noticed, I have been dying to nab a carton of Edy’s Slow Churned Peppermint Ice Cream for a few weeks now. I have seen the sought after Peppermint flavor around, but it has been MIA at my regular Publix. While I was out and about after work, I decided to track down the flavor at another Publix.

Two Publix Supermarkets and one Winn Dixie later I still had no Peppermint Ice Cream. :( I was aggravated from traffic and not being able to find what I wanted, so I settled on a single serving of Edy’s Coffee Ice Cream.

I enjoyed my serving with a sprinkle of granola on top.

It is my new mission to track down the peppermint ice cream once and for all! I don’t care if takes a dozen Publixes it will be found and enjoyed. ;)

This afternoon I had the world’s most perfect snack of Apple and Almond Butter.

This jar of Naturally Nutty’s Vanilla Almond Butter was on its last leg.

The apple slices were perfect for digging out every last nutty drop.

The Vanilla Almond Butter was a sample sent by the great people at Naturally Nutty and I have to admit it was the best sample any company has ever sent me. In fact I was already checking out the online store and calculating how much it would be to get my hands on another jar. Is it worth $10 per jar? It just might. ;)

While I was stuck in traffic this evening I realized just how little time I have from when I get off of work until I go to bed. If I head home after 5:00 and try to make it in bed by 9:00 that leaves me less than 4 hours to myself in the evening not including the time it takes me to get home, take Maddie out, make dinner, blog, etc. In the end that’s not very long at all. :( I think the fact that it gets dark around 5:30 makes it that much more depressing.

Having so little time in the evening is exactly why I make an extra effort to get up earlier in the morning and get my exercise in then. After work is reserved for being a bum. I learned my lesson.

My Holiday Wish List

I seriously had enough to feed a family of 6 and I am not sure it will freeze very well. Expect to see plenty of chickpea casserole during the week.

Midmorning I snack on a new bar that came in my Space Coast Registration Bag.

It was pretty good, but WAY too sweet. There was an extra gooey, sugary layer on the bottom of the bar that needed to go. I bet if they took that bottom layer off then the bar would be perfect. :)

Holiday Wish List…

With all the talk about Christmas Shopping for others this morning, I thought I would share my own Christmas Wish List this year. My Mom always tells me that I am the easiest person to shop for, which I 100% completely agree with. Find me anything with snowflakes, running, or cooking related and I am elated.

This year my list is short and sweet as I have pretty much purchased the big thing that I wanted (camera) and I already know that skiing in Colorado counts as a my big Christmas present for the year.

  • Running Clothes
  • New Jeans
  • 10 lb Dumbells
  • Immersion Blender
  • Rainbow Flip Flops
  • More Ram for my Mac

In fact if all I opened on Christmas morning was a chip that provided more ram for my Mac then I would be one HAPPY girl!

If I was living in a dream world I would also ask for

  • Mini Laptop/ Notebook
  • Flat Screen TV
  • New Running Shoes
  • My Race Fees covered for the next year, etc

But, that is just my dream world. ;)

Entering the Final Month of Training

Happy December 1st everyone! Has anyone finished their Christmas shopping yet? I haven’t even started! I tried to do some Cyber Monday Christmas shopping last night, but just ended up buying myself a camera bag. Oops.
