15 Bean Soup

I <3 Soup!

Especially warm, filling comfort soup.

I had half a bag of 15 bean soup that had been in my cupboard for over a year and in the spirt of the Thanksgiving challenge I decided it had to be on the menu for dinner tonight.

The dried beans soaked in a can of a Vegetable Broth with an array of spices while I was at work all day. When I returned home I sauteed a small onion, garlic, kale, and the last of my Boccalone Salami from my Foodbuzz Festival swag bag. Once the onions were soft I added the beans and another can of vegetable broth to the pot. I brought everything to a boil for 5 minutes, then let it simmer for another 90.

The results were very rich and satisfying. Yum!

On the side I had a piece of reheated cornbread that I pulled from the freezer.

Dessert was 1/2 of one of Amanda’s Peanut Butter Cup Blondie with some Coconut Milk Chocolate Ice Cream.

All I have in the fridge at the moment is chocolate ice cream – not my favorite. I can’t wait to buy a container of Peppermint Ice Cream in the very near future. ;)

This afternoon I had a serving of Blueberry Granola Clusters as a snack.

More Packing…

I am not leaving for my parent’s until Wednesday, but I am already preparing for the 4 day trip. This afternoon I emptied out my suite case from this past weekend and have begun filling it for the next. I feel like I am living out of my suit case at the moment, but its all been worth it.

What Thanksgiving Challenge?

Gotta love short weeks, especially when they start out flying by. ;)

Mid-morning I snacked on a serving of mixed nuts.

Lunch consisted of the other half of my Orange-Cranbery Turkey Sandwich from yesterday.

Thanksgiving Challenge Update…

So…. ummm yeah…. about that Thanksgiving Challenge…

As you can probably tell from my recaps this weekend was not the best for this particular money saving challenge. I think I would do AWESOME at this challenge if I picked a month where I didn’t travel at all, but sadly (happily?) those do not exist.

Derek was great and paid for the food the majority of the weekend, but I felt really guilty about that fact and I am pretty sure the point of the challenge is not to just let other people pay for you instead of spending your own money.

Technically I could have approached this weekend a little more prepared and packed my own meals for part of it, but knowing I was going to be in Tallahassee – something that only happens once or twice a year – and being surrounded by all of my favorite places to eat, I just couldn’t bring myself to do it.

It was an awesome weekend and definitely one worth going over the challenge budget.

With all that being said my official total thus far of all food spent in the month of November (sans San Francisco) comes to: $149.96

Yikes!

And there is still a week to go! I guess the point now is to not let that number climb any higher? We shall see…

Three More Days Until Turkey!

Happy Monday of the week of Thanksgiving! I can’t believe Thanksgiving is only three days away! It feels like yesterday I was piling my plate high with turkey, ham, green bean casserole, pumpkin pie and more!! Mmm… just thinking about it is making my mouth water already.
