My Princess has returned to her kingdom.

I need to give a BIG THANKS to my sister, Kelly, for watching Maddie while I was in Tallahassee this weekend. Maddie can be a bit high maintenance, so major kudos to Kelly & Anthony for keeping up with her. I owe you big time!
Maddie was ecstatic to be home and made a few laps around the apartment before passing out due to pure exhaustion from her weekend with her cousin Oliver.

Poor thing can barely lift her head she’s so pooped.
While Maddie slept I ran a couple Sunday errands and snacked on an Amazing Grass Green SuperFood Bar.

Tonight I had zero energy to cook or prep a big elaborate meal. Instead I made a quick and easy salad.

I started with a bowl of cucumber, tomatoes, broccoli, and raisins.

Then coated the veggies with a dollop of Jalapeno and Cilantro Hummus I found at the Publix deli.


Everything went on top of a bed of Kale that I had massaged with vinegar and olive oil and let stand for 30 minutes


With a serving of Kashi Crackers on the side.


It was a tasty green meal.

Dessert was 1/2 of one of Amanda’s Peanut Butter Cup Blondies.

The rest of my plans for the evening include snuggling with Maddie and watching Twilight for the millionth time. Since seeing New Moon I can’t get the first movie off my mind.

Your dinner looks delicious, but I would be starving if that (+a few pancakes + half a sandwich) was all I ate after a 16mile run!!!!!
Oh well, I guess you’ve just adapted.
hey meghann, jsut wanted to let ya know i voted for ya and I mean to comment more, but life just gets in the way ya know? haha. congrats on the long run today and getting lost in the dark is totally something i would do too.

Sometimes a big salad is exactly what you want for dinner and perfectly hits the spot.
Do you think you ate enough to compensate for 16 miles today? How do you make sure you get enough calories? I hope this doesn’t sound rude, I don’t mean it to be! I am just curious as to how you make sure you eat enough after long runs!

I love big salads for Sunday night dinners. I’m always tempted to hit up the Whole Foods salad bar, too bad it’s so expensive! Tonight I made a big green bowl of: romaine, spinach, avocado, and sugar snap peas.
Jalepeno hummus? I’ve never seen that before but it looks delicious. Yummm. Good luck with the good mood gig thing!

I love the new lens that you’ve been using! I think I’m going to ask for it for Christmas because I love how the foreground is sharp and the background is blurry (called depth of focus, right?). I love my new DSLR but feel like there is so much to learn about it! I hope you have your own lovely under the tree this Christmas, too!

Your dog is absolutely adorable.. Her ears are so perky! And the greens in the salad look divine. I’m happy to try this for a dinner salad.. I’m guessing the hummus makes an excellent addition!
