Maddie the Graduate

Congrats to my little graduate!

Maddie officially graduated from her 8 week puppy training class tonight. She can now sit, stay, lay down, leave it, loose leash walk, and come when called. :)

Our trainer brought a cap and sash out for the little graduates to pose with. I was a very proud fur Mommy. :)

I am still debating taking Maddie to the intermediate course, but with the holidays coming up I am going to have to put that commitment on hold for the moment. Overall I was very pleased with the training class offered through my local PetSmart and highly encourage other puppy parents seeking puppy training to check out similar classes in their own area. :)

This afternoon I had an off site meeting that lasted a little longer than intended. By the time I made it back to my desk at 4:00 I was starving and gobbled up my snack of Pumpkin Seeds and Dried Peaches in 10 seconds flat.

Dinner was rushed before puppy class and quickly thrown together.

I cooked a sweet potato in the microwave for 5 minutes then topped with black beans, mushrooms, avocado, and plain yogurt.

You know I couldn’t resist a piece of Pumpkin Cornbread on the side. ;)

Seriously can’t enough of this!

My dinner was filling, delicious, and took 7 minutes top to throw together. This meal just goes to show you that fast food doesn’t necessarily have to involve a drive thru to work. :)

After puppy class Maddie and I celebrated with treats. She got a peanut butter filled bone and I got a serving of Edy’s Tart Honey Yogurt with Pom Seeds and Granola.

Now if you will excuse me I have some serious Thursday night TV to catch up on. Vampire Diaries here I come!

Frittata Soup

I wish I could take credit for this idea, but then I wouldn’t be serving the lovely Sarah at Suite Apple Pie any justice. It’s her creative mind that came up with the concept for Frittata Soup and it was her blog that I discovered it on well over a year ago. The idea had been lost for a while, but after meeting Sarah at the Foodbuzz Festival this weekend I suddenly remembered it and have since been determined to try it ever since.

The concept is so easy – take left over frittata, add it to vegetable broth, heat, and serve.

This was a great way of re-inventing left overs into another fun and unique meal. Plus, the hot soup was just what I was craving with the cool and gloomy weather outside.

With my soup I had a piece of Pumpkin Cornbread.

I believe the bread was even better today than yesterday. I am already planning how to incorporate another piece to my meal tonight. So good!

Christmas Cookies…

I can’t remember if a PR company had told me they were sending me a copy of the Betty Crocker’s Christmas Cookies mini magazine or not, but I was pleasantly surprised to see it in my mail box today.

I have been thumbing through the magazine all morning and all the beautiful, delicious recipes have me in the Christmas baking spirit!

7 Mile Make Up
