Afternoon Snack: Trail Mix + Stonyfield Pumpkin Pie Yogurt

Trail Mix included
- Peanuts
- Almonds
- Raisins
- Annie’s Coco & Vanilla Bunnies
- Pumpkin Seeds

Awesome combination!
Dinner: Veggie Frittata & Sweet Potato Hashbrowns

Veggie Frittata
- Asparagus
- Mushrooms
- Onion
- Garlic
- Tomato
- Olives
- Spinach
- Cowgirl Creamery Mount Tam Cheese
- 2 Eggs
- 1/2 cup Egg Whites
- 1/4 cup Plain Yogurt
- Dill
Sautee the veggie in an oven safe skillet with a little olive oil spray. In a separate bowl combine the eggs and yogurt. Once veggies are soft pour the egg mixture on top and sprinkle with cheese and dill. Give the egg a chance to pull away the side then move the skillet from the oven top to the oven at 420 degree for 10 minutes or until firm.

I believe its the cheese that made this dish extra delicious! I’m going through it too fast – my 1/2 a wheel is almost gone!

Sweet Potato Hasbrowns

I just diced a small sweet potato and cooked on the stove top with a little evoo, onion, garlic, S&P
Dessert: 3 Annie the Baker Cookie Dough Cookies I swiped from the Taste Pavilion on Saturday.
