Mission Impossible

My mission: finish this post by 7:30 so that I may be sound asleep by 8:00.

Afternoon Snack: Trail Mix + Stonyfield Pumpkin Pie Yogurt

Trail Mix included

  • Peanuts
  • Almonds
  • Raisins
  • Annie’s Coco & Vanilla Bunnies
  • Pumpkin Seeds

Dinner: Veggie Frittata & Sweet Potato Hashbrowns

Veggie Frittata

  • Asparagus
  • Mushrooms
  • Onion
  • Garlic
  • Tomato
  • Olives
  • Spinach
  • Cowgirl Creamery Mount Tam Cheese
  • 2 Eggs
  • 1/2 cup Egg Whites
  • 1/4 cup Plain Yogurt
  • Dill

Sautee the veggie in an oven safe skillet with a little olive oil spray. In a separate bowl combine the eggs and yogurt. Once veggies are soft pour the egg mixture on top and sprinkle with cheese and dill. Give the egg a chance to pull away the side then move the skillet from the oven top to the oven at 420 degree for 10 minutes or until firm.

I believe its the cheese that made this dish extra delicious! I’m going through it too fast – my 1/2 a wheel is almost gone!

I just diced a small sweet potato and cooked on the stove top with a little evoo, onion, garlic, S&P

Dessert: 3 Annie the Baker Cookie Dough Cookies I swiped from the Taste Pavilion on Saturday. :)

Chugging Along

The four cups of black tea seem to be doing the trick of keeping me awake at my office thus far. Sure I have that shaky caffeine overload feeling and I have to use the bathroom every 5 minutes, but at least I am awake and getting the job done. :)

For a snack mid-morning I had a Dark Mocha Almond Kashi bar

Lunch was the last of my leftover Butternut Squash, Apple and Sun Dried Tomato Soup with Pumpkin Seeds on top.

I’m so bummed this was my last serving from the freezer. I have been craving soup for every meal lately, I need to step up and make some more. I see a batch of Split Pea soup on my future. ;)

With my soup I had the other half of my Acme Bread with Mezzeta Pesto and Cowgirl Creamery Cheese.

I’ll admit the bread was on the stale side today, but still chewy and perfect for soup dipping.

Sleep is good
