The Lazy Blogger

by Meghann on November 3, 2009

I had no motivation to cook dinner this evening.

After work I went boot hunting at the mall and by the time I got home from work it was late and I was tired. I stood in front of the fridge for 10 minutes before tossing random vegetables and a can of tuna in a bowl and calling it dinner.

I ended up with an odd concoction that I wouldn’t recommend repeating.

It consisted of

  • Broccoli Slaw
  • Beets
  • Mushrooms
  • Tuna
  • Pumpkin Seeds
  • Honey Mustard
  • Goat Cheese

I told you it was odd…at least it was edible. ;)

On the side I had a few Kashi Crackers for a bit of a crunch added to the meal.

The whole time I was trying to decide what I wanted for dinner, all I could think about was dessert. :) I debated just eating dessert for dinner, but decided against it and instead dug in to the last of my Pumpkin Ice Cream as soon as I but my dinner bowl in the sink.

I can’t believe I finished the whole container in less than a month – I think thats a new record for me.

So long Pumpkin Ice Cream, you will be nearly missed. *sniff *sniff

Now the hunt is on for the seasonal Peppermint Flavor that should be hitting the shelves soon. I can’t wait!

Work was crazy all afternoon, but I did find time to snack on a 100 calorie bag of Kettle Corn around 3:30.

I feel so lazy lately. Any desire to to pack or clean has gone out the window. My bed is calling my name and I think I am going to listen to it.

Good Night!!!

Candy Stash

by Meghann on November 3, 2009

If you are ever looking for a way to get rid of unwanted treats or baked goods, I’ve discovered an office setting is the best placed to do so.

In my office there are currently three strategically placed large bowls of rejected Halloween candy with signs welcoming passer byers to ‘help themselves.’

Passing the bowls each day has been somewhat of a challenge. I have been absentmindedly picking out my favorites and storing them at my desk for a ‘special occasion.’ My stash has been growing by the hour.

After a somewhat frustrating morning I decided today was one of those ‘special occasions’ when breaking into my stash was a necessity.

Mmm… Snickers!

The Snickers helped calm me down, but I was still feeling hungry. The Dried Mango and Pineapple I brought in cured that problem.

After my snacks I was on such a roll with work that for the second day in a row lunch wasn’t consumed until well after my typical lunch time. Who am I?

IMG_5109

I went with simple and easy and reheated a leftover hamburger from Saturday night for lunch.

I topped the burger with Ketchup, Mustard, Mushrooms, and Spinach.

Have you ever seen Burger King serve anything that looked this tasty? I don’t think so!  ;)

I really wanted fries with my burger, but had none prepared and didn’t want to waste time with an oven. I took a chance with the microwave and cut a ¼ of a butternut squash into fry shapes and nuked them on high for 3 minutes.

The results were excellent. Especially when dunked in a little ketchup. ;)
