Sunday Shopping

Why is it when you have no intention of buying anything that everything screams ‘Buy Me’ at the mall BUT when you shop with a mission nothing stands out?

Its one of those odd mysteries in life you can always count on.

After browsing half a dozen stores at the mall this afternoon I was feeling very discouraged. I had no definite idea of what I wanted, but I knew everything I saw wasn’t it.

Thankfully after a couple of hours of not knowing what I wanted, I stumbled into New York & Co and was able to walk away with a couple of new shirt ensembles that just might work.

I now have my whole wardrobe planned for San Francisco next weekend. Its funny how figuring out what to wear always seems to be the most stressful part of trips for me!

When Derek and I left the apartment before shopping I knew hunger would eventually kick in and I didn’t feel like paying $10 for what ever the food court had to offer. Instead I came prepared and packed a lunch to refuel with after some hardcore shopping cardio.

My packed lunch contained an Almond Butter, Pumpkin Butter, and Raisin Sandwich

The only item missing was a drink. Luckily Starbucks came to the rescue with an Unsweetened Grande Passionfruit Iced Tea.

My lunch was delicious, filling and nutritious. Derek enjoyed his as well.;)

Pumpkin Seeds

On Friday I saved the seeds from the pumpkin Derek and I carved, but at the time was too lazy to bake them. I stored them in the fridge and brought them out this afternoon to bake.

I wasn’t sure if the seeds would still be good, but they worked great.

I simply seasoned the seeds with salt and pepper and roasted for 10 minutes at 415. Its good to know when ever I have seeds to roast that holding off for a couple of days is no big deal. :)

Pizza, Pizza

Derek requested Build Your Own Pizzas as his last meal before he departed back to Tampa.

I just so happened to have pizza dough in the freezer that I had prepped a last week and plenty of veggies that needed to be eaten. Once the crust defrosted dinner took no time to prepare and consume.

We each had our own personal sized pizza, but the toppings were the same.

  • Marinara Sauce
  • Mushrooms
  • Okra
  • Carrot
  • Onion
  • Hamburger
  • Zucchini
  • Cheese
  • Pumpkin Seeds
  • Basil

The pizza came out nice and crisp – just the way I like it. I think the trick to a perfect thin crust is letting the dough come completely to room temperature before rolling out.

I had been fantazing about this cupcake all day.

I managed to steal a couple of Megan’s cupcakes at the party last night. They are completely made from scratch and a-ma-zing! I have one more left in the fridge that I know ill be on my mind all day tomorrow as well.

This time change is already throwing me off. I can barely keep my eyes open; a clear sign I need to get to bed.

It was another great weekend and I’m looking forward to my short work week before another weekend of fun begins.

Halloween 2009 Recap

Twas a magical night in the kingdom of Graduate Meghann.

Derek and I were supposed to be Cinderella and Prince Charming, but everyone thought we looked more like Prom King and Queen. Either way I felt like a fairy tale princess in my poofy dress and crown and thats all that mattered. :)

The original plan was to have a light dinner before heading out to Megan’s for the Halloween party, but for some reason burgers sounded good.

I added chopped onions, minced garlic, ground flax seed, red pepper flakes, jalapenos, and soy sauce to a pound of lean ground beef then formed three patties.

The three patties went on the george foreman until they were medium well. I served myself 1/2 of a burger in a pita with spinach, tomato, & honey mustard sauce.

Per Derek’s request we had Okra Fries on the side.

As well as left over Oven Potato Fries from Thursday night.

It was a really tasty meal. I don’t eat burgers very often, but I do enjoy them when I do. :)

After dinner my Prince Charming and I headed to our ball i.e. Megan’s Super Spectacular Halloween Party!

Around 1:00 am I was in danger of turning into a pumpkin, so we called it a night.

Thanks again Megan and Jason for throwing a great party!

The extra hour of sleep was a welcomed addition this morning. Derek and I took our time getting up this morning before taking off on a leisurely run this morning.

Before we left I was a little hungry so I nibbled on a Glo Bar on the way out the door.

We were suppose to go 2.5 miles, but I got lost in a foreign neighborhood and ended up tacking on an extra mile. Oh well.

Luckily we did eventually end up back at the car and after a quick changed headed in to Shakers for breakfast.

I decided on the Greek Omelet for my order.

The omelet was filled with tomatoes, spinach and feta cheese. I requested egg whites instead of whole eggs.

Today is all about shopping. I NEED to find a cute outfit to wear while in San Francisco next weekend. I also am in desperate need of a new jacket, apparently I own no cute or practical ones for walking around a city.
