I learned a very valuable lesson tonight: If you plan to carve pumpkins the night before Halloween; make sure to purchase the pumpkins ahead of time. ๐
I drove all over north Orlando earlier this evening trying to hunt down pumpkins for Derek and I to carve. Apparently finding a pumpkin on Oct. 30th is like finding a needle in a haystack!
After tying four different stores I vaguely remembered spotting a display of pumpkins at Whole Food earlier today. Derek was gracious enough to stop on his way in to town and check. he said there were 6 pumpkin left and one of them was now ours. Yay!
We named him Paul as in ‘Paul the Pumpkin’ Catchy, don’t you think?
I took the absence of pumpkins today as a sure sign that pumpkin season is rapidly coming to an end. It makes me sad.
Best to enjoy while it is still here!
Starting with 1/2 a Vegan Pumpkin Scone with a smear of Peanut Butter and Mini Chocolate Chips as an after work snack this afternoon.
Yum!
And a Pumpkin Beer while cooking dinner.
A few weeks ago I posted a stir fry on the blog that Derek went on and on about how much he wanted to eat it himself. I promised next time I cooked for him that a stir fry would be involved. The next time just happened to be tonight.
The vegetable heavy stir fry contained
- Whole Wheat Noodles
- Onion
- Brussel Sprouts
- Eggplant
- Zucchini
- Carrot
- Tofu
- Red Pepper Flakes
- Garlic
- Peanut Sauce
- Soy Sauce
- Chopped Onions
Derek was happy as could be eating the stir fry. He has a slight obsession with noodles that rivals my pumpkin obsession. ๐
After dinner Paul came to life.
Lack of design = lack of carving skills. hehe Plus I prefer the classic pumpkin look anyways.
He’s alive! He’s alive!
We celebrated the birth of Paul with a trip to Jeremiah’s for Gelati.
Maddie had the show off her new pretty princess dress we got on clearance at PetSmart for $4.
Isn’t she beautiful?!?!
The first Jeremiah’s we went to was out of Pumpkin. ๐ I really, really wanted pumpkin, so we drove an extra 20 minutes to another Jeremiah’s on the other side of town so I could get what I wanted.
I think the girl at the window thought I was crazy when I asked if she would call the other store to see if they had pumpkin in stock or that I was willing to drive all the way over just to have it. Sometimes its worth going out of your way to get what you crave. ๐
Maddie tagged along and had her traditional puppy sized ice cream.
She was the star of the show in her princess dress.
I can’t believe its almost midnight and I have to be up tomorrow at 5:30! Ooppss! I guess that means I need to get some sleep. Wish me luck on my 16 mile run in the morning; looks like I’m going to need it.
Have a Happy Halloween Everyone!
How fun! I learned my lesson last year not to wait until the last minute to get a pumpkin, it gets so crazy trying to find one the night before! Love all the pumpkin themed foods, Abbie is adorable!
Yay for carving pumpkins!! I can’t believe that everyone was out! I hate when stores take down Halloween things before Halloween is even over to put Christmas things up!
I think it’s awesome that you made the girl call to check that pumpkin was in stock! lol
Maddie is the perfect princess in that dress! She never fails to make me smile:)
Oh my goodness, Maddie is just adorable in her princess costume!
Obviously the Pumpkin Stonyfield Yogurt in the last post was just a warm up! Love the Jack-0….errr.. Paul
I love that you drove across town for the gelati. ๐ And you’re right. I’m all for satisfying a craving with the thing I actually want instead of a crappy substitute.
And Maddie looks adorable in her dress.
Pumpkin gelati looks so good. Maddie is the cutest princess dog I’ve seen!
Maddie is so adorable! ๐
Good luck on your run!
o my goodness maddie is so precious! that costume looks so great on her! Your pumpkin looks amazing, can’t go wrong with tradition right?

You are so high maintenance for driving another 20 minutes just for your pumpkin fix…I SO would have done the same thing!! haha My husband would have thought that I was crazy, but he still would have driven me!!
OMG! Maddie is adroable! Good luck tomorrow.
MADDIE!!! Oh my, that costume is priceless ๐
Mmmm… pumpkin gelati. I wish we had a Jeremiah’s around here! I also have to look around for that pumpkin yogurt – no luck yet.
awwww Maddie just melted my heart!!! She wins the award for best/cutest halloween costume!!! SO adorable!! Happy Halloween Meghann! xoxo
I tried to find pumpkins on Wednesday and could barely find any! You are lucky you found one. ๐
Haha Maddie looks awesome in that dress. Once we bought my dog a costume for Halloween and she tore it off within two minutes!
Ohmygaaawsh Maddie is too cute in her princess costume!! I think there’s nothing wrong with driving 20 minutes to get what you want, the quest is half the fun ๐
Good luck on the 16 today!
Awwww! Maddie is darling!
Have a good run this morning!
that pumpkin gelato looks delicious and the pic of maddie eating it in her costume is too cute!
Pumpkin gelati is SO worth an extra 20 minutes in the car ๐
Maddie’s costume is absolutely adorable, and perfect for her! I hope you have a great Halloween Meghann!
Meg

I ran into the same dearth of pumpkins last year when I tried to help my French friends carve their first pumpkins. It’s very odd!
I love Maddie’s princess dress. She looks very happy in it.
ohh what a pretty pasta mix! looks yum… and i miss jeremiah’s soo much. they need to expand out of orlando ๐
Um, Maddie is the cutest. ever.
And I totally agree, sometimes going out of your way is worth it for what you want.
your scones look amazzzinng!!
Um doesn’t everyone drive twice as far for dessert as needed? LOL
How do you get your tofu crispy for a stir fry or do you? Mine is always kind of rubbery and was wondering if I could fix it? It doesn’t taste like Whole Foods that’s for sure.
Awwhh I missed pumpkin carving this year! Love big stir fries with tons of veggies. I always go to the salad bar at school and stir fry it back at my dorm. The best, and soo easy!
That gelati looks so good! My boyfriend and I sometimes drive thirty minutes to a different ihop (ihop is my weekness!) just so we don’t have to wait in line. (he’s really impatient though. I realize that by the time we get to another one, we would be seated at the first one lol)
That costume is so cute! I thought about getting Lexi (my yellow lab) a costume but decided not to ๐
Happy Halloween.
Love the pumpkin and Maddie’s costume.
that gelato looks incredible
I would totally drive to the other side of town for pumpkin ice cream. I wish they had it here. Rumor has it, though, that TCBY has pumpkin yogurt. Just might have to check that out this evening.
heheheh what a cutieeeee!
Hhahahha I bought a pumpkin to carve TODAY and it was so expensive!
Oh-my-CUTENESS! I love Maddie’s costume! Here little face is just too darn sweet!! Give her a big kiss for me!
Also – you are killing me with this Jeremiah’s place! The things you get there look so unbelievable!!!! YUM!
What is Jeremiahs? That icecream looks absolutely amazing!
I’m going to try and make that stir fry sometime this week….do you do anything special to the tofu? I’ve only cooked w/tofu once in college and it didn’t work out too well!
