I learned a very valuable lesson tonight: If you plan to carve pumpkins the night before Halloween; make sure to purchase the pumpkins ahead of time.
I drove all over north Orlando earlier this evening trying to hunt down pumpkins for Derek and I to carve. Apparently finding a pumpkin on Oct. 30th is like finding a needle in a haystack!
After tying four different stores I vaguely remembered spotting a display of pumpkins at Whole Food earlier today. Derek was gracious enough to stop on his way in to town and check. he said there were 6 pumpkin left and one of them was now ours. Yay!

We named him Paul as in ‘Paul the Pumpkin’ Catchy, don’t you think?
I took the absence of pumpkins today as a sure sign that pumpkin season is rapidly coming to an end. It makes me sad.

Starting with 1/2 a Vegan Pumpkin Scone with a smear of Peanut Butter and Mini Chocolate Chips as an after work snack this afternoon.

Yum!
And a Pumpkin Beer while cooking dinner.

A few weeks ago I posted a stir fry on the blog that Derek went on and on about how much he wanted to eat it himself. I promised next time I cooked for him that a stir fry would be involved. The next time just happened to be tonight.


The vegetable heavy stir fry contained
- Whole Wheat Noodles
- Onion
- Brussel Sprouts
- Eggplant
- Zucchini
- Carrot
- Tofu
- Red Pepper Flakes
- Garlic
- Peanut Sauce
- Soy Sauce
- Chopped Onions
Derek was happy as could be eating the stir fry. He has a slight obsession with noodles that rivals my pumpkin obsession.

After dinner Paul came to life.


Lack of design = lack of carving skills. hehe Plus I prefer the classic pumpkin look anyways.

He’s alive! He’s alive!

We celebrated the birth of Paul with a trip to Jeremiah’s for Gelati.
Maddie had the show off her new pretty princess dress we got on clearance at PetSmart for $4.

The first Jeremiah’s we went to was out of Pumpkin.
I really, really wanted pumpkin, so we drove an extra 20 minutes to another Jeremiah’s on the other side of town so I could get what I wanted.

I think the girl at the window thought I was crazy when I asked if she would call the other store to see if they had pumpkin in stock or that I was willing to drive all the way over just to have it. Sometimes its worth going out of your way to get what you crave.

Maddie tagged along and had her traditional puppy sized ice cream.

She was the star of the show in her princess dress.
I can’t believe its almost midnight and I have to be up tomorrow at 5:30! Ooppss! I guess that means I need to get some sleep. Wish me luck on my 16 mile run in the morning; looks like I’m going to need it.
