Fall Flavors

As predicted the homemade pumpkin sugar cookie was too cute to pass up as a snack this afternoon.


My co-worker’s wife made these from scratch – even the icing! The cookie was nice and soft and the icing was sweet and flaky. Yum!

I’ve noticed the past few days my meals have been full of lovely fall flavors. Its funny how with the change of seasons I always start craving certain foods. Despite the record high temps I still find myself lusting after roasted vegetables and winter squash.


For dinner tonight I roasted a 1/4 of an acorn squash in one pan and baked beets and tofu with an Apricot Mustard Marinade in another.


Everything was in the oven at 420 for 20 minutes. Once everything was cooked and smelling fabulous I placed it al on a bed of spinach then sprinkled with some crushed almonds.


This meal was full of Fall flavors and full of tasty goodness. Yum!

After dinner I got to work baking my contribution for Halloween Treat Week tomorrow.


Kristin had sent me this box of Trader Joe’s Pumpkin Muffin Mix the other week. Instead of experimenting with a new recipe on my co-workers I decided to play it safe and give the mix a shot.


Of course, I couldn’t resist spicing up the batter with pieces of Pumpkin Spice Hershey Kisses.



Heres a tip when bringing muffins or cupcakes to an event or work place: bake them in mini muffin pans! You are able to get more muffins out of your batter and you’re teaching your co-workers how to enjoy treats in moderation because either way they are going to have one muffin whether it be regular sized or mini. ;)


Hot out of the oven I had to sample the results from my hard work.


Wow! This mix rocked! The pieces of the pumpkin spice hershey kiss melted into the muffin giving hot pots of gooey pumpkin-ness.


I can’t wait to hear what my co-workers have to say about these tomorrow. ;)

Number 3 Baby!!

This afternoon not only did I surpass the number 5 spot, but I bi-passed number four and headed to number three!!!! Yippeee!!!

5000 Votes!

I hit another milestone today in my quest to become the Sam-e Good Mood Blogger.  In less then a week – I officially surpassed 5000 Votes!!

I am also – this close – to moving in to the #4 spot!

Voting comes to an end on Friday and as long as everyone keeps the voting up, it looks like I am a shoe in for the Top 20! I honestly can’t believe it. You guys seriously rock and I would not have been able to make it to over 5000 votes without all of your wonderful dedication.

This opportunity means the world to me and I know I will make the giddiest good mood blogger out there. ;)

After the Top 20 are officially selected, the next step includes producing a video and writing a sample blog entry. This should be the fun part!

My Spinach Salad on the side consisted of spinach, beets, cucumbers, and olives drizzled with some raspberry vinaigrette dressing.

As far as desserts go… someone did bring in homemade sugar cookies that look like they would make a great afternoon snack. ;)
