For once when my alarm went off at 5:30 this morning I had no desire to get up. I turned the alarm off and figured I would simply rest my eyes for a couple of more minutes before getting up.
45 minutes later Maddie was barking at a shadow in the window and I realized simply resting my eyes just doesn’t cut it. I managed to sleep through any time I had set aside for yoga or strength training. Instead, my body obviously preferred more sleep and I was happy to listen to it.
The extra sleep oddly enough gave me extra time to focus on making a great breakfast courtesy of this little guy.

A reader who I have been e-mailing sporadically back and forth since the start of the blog, offered to send me a fall themed package of Trader Joe goodies last week.
When I received the package and discovered all the pumpkin inspired goodies, I nearly squealed in excitement!!

The Pumpkin Pancake and Waffle Mix was of course on my first to try list. I followed the directions on the back of the box to a T in an effort to make the world’s best pumpkin waffles.
While the waffles were heating up in the waffle iron, I heated up a mix of chopped apple. crushed almonds, and pumpkin butter in the microwave as a topping.
Wow! Is all I can say. These waffle was sweet, fluffy and very pumpkiny. I was in pumpkin heaven.
The topping was the perfect pairing with the waffle. The pumpkin butter melted with the mushy apples and thinned out creating a perfect syrup like consistency to coat the waffle with. It was too good for words.

YAYAYAY! I’m really excited about this giveaway because I’ve been wanting a waffle iron for awhile. (Duh, I could probably go buy one…)
Anyway, the first thing I saw when I went to CSNStores.com was a doggy rain jacket, which is completely ridiculous/awesome.
I also think that a new cookware set (non-stick?) would be quite useful in the kitchen since I have a wonky set cobbled together from old hand-me-downs.

What a neat giveaway! I had a lot of fun looking at the csn site because my husband and I are on a super tight budget, BUT we’ve been experimenting a lot more in the kitchen lately! Each week, we think of another thing we “need.”
