Avocado Inspired Meal

Inspirations for meals can come in many forms. Sometimes I am inspired by other meals I see on the blogs, some times I just randomly pull out what ever is fresh in my fridge and other times – like tonight’s meal – I purchase a special vegetable/ fruit/ meat that gets the ideas rolling.

This beautiful Avocado was tonight’s inspiration.

Yesterday at Publix the Avocados all felt very ripe and tasty. I knew I could make a great meal out of it this week, so I purchased one with the intent of cooking a fabulous Mexican inspired dish.

I took the avocado and threw in some fish, black beans, and tortillas and voila – Fish Tacos.

Besides the avocado the key ingredient to this dish really came from the black bean salsa I made as a taco topper.

For the salsa I simply combined all of the following ingredients in a bowl and let it blend in the fridge for 30 minutes.

  • 1 Can Black Beans
  • 1/2 cup Frozen Corn
  • 1/2 cup Chopped Tomato
  • 1/2 small Chopped Small Onion
  • Chili Powder
  • Garlic Salt
  • Cumin

The fish was a fresh piece of Tilapia that I seasoned with some Old Bay then cooked on the stove top. I believe seafood makes the best taco filling.

Tonight’s dessert has to be one of the most ingenious ideas I’ve ever had.

I will just let your ideas run wild on how good this truly was. ๐Ÿ˜‰

This afternoon I had a 3:00pm meeting that lasted until it was time for me to go home. By the time the meeting was over I was starving, but didn’t want to spoil my dinner with the large snack I had originally packed. Instead I opted for Plan B and had a small handful of Almonds from my emergency snack stash to hold me over.

Having an emergency snack stash is a very important in an office setting. ๐Ÿ˜‰

I still don’t feel like I have caught up with all my sleep from this weekend. I’m exhausted and ready to fall asleep on my keyboard. Perhaps my bed will make a better alternative. I’m off to find out.

Yum! Your fish tacos look tasty! And i can’t even fathom how good dessert was!

I agree – having snacks @ work is vital. I have a box of Kashi bars in my desk drawer and it’s saved my life a few times!

I am in over my head and it’s ALL your fault. I love trying new things although I have always stayed far far away from mushrooms. Sunday I went in search of squash and came home with two caps of portabellas that were available at a great price. I have no idea how I jumped from squash (which were unavailable) to mushrooms but I blame you because you were talking about it so much last week.

love your double pumpkin dessert – i have been trying to find edy’s pumpkin EVERYWHERE but can’t find it! i even looked up where to find it online but still can’t. arg!

I LOVE fish tacos. I actually bought some fresh Mahi Mahi today at Whole Foods. I see it in my future!

I am tired too. I ran a marathon yesterday and had the worst sleep of my life last night. I am ready to pass out!

I just wanted to thank you for alerting me to the Edy’s Pumpkin ice cream. I hunted some down this weekend, and my tastebuds have been singing ever since!

And OMG!! A pumpkin ice cream/oatmeal cookie sammich!?!? Genius!!

I have been on a bit of an avocado kick the last few days too. My hairdresser gave me a few on Saturday. They are so buttery and rich tasting – really good!

i absolutely love talapia, but i have never had fish tacos before, now that you made them i really want to have them!

Oh my gosh, I love the cookie/ice cream sandwich!

I am a big avocado fan. it’s hard sometimes to find ripe ones and I hate waiting for them to ripen. But luckily I found one this weekend too ๐Ÿ™‚

I haven’t had avocado in SO long it feels like!! And fish tacos are the best. I’d pick fish over meat ANY day. My family used to have fish taco nights, they were so much fun!

I love the fish taco idea. I made a similar black/bean corn salsa recipe with some additions. So refreshing and light! You can eat it just by itself

Oh how I love fish tacos!! especially with that salsa and avocados! Great recipe!

I’ve just gotten in the habit of leaving a container of almonds in the car for an emergency snack…it’s come in very handy!
