Running the 10k this morning sure did take a lot out of Derek. He basked the the glory of his accomplishments before passing out and taking a four hour long nap. He was able to get more sleep this afternoon then I had in total on Friday night.
While he slept I managed to get a little work done, watch a full length movie and make a veggie filled lunch.

After a day of indulging yesterday and a plate of bread for breakfast, all I wanted was a big bowl of vegetables. And that is what I had.
- Spinach
- Sugar Snap Peas
- Carrot
- Tomato
- Baked Tofu
- Spinach & Artichoke Hummus
Hummus makes the best dressing. Its adds great flavor and gives the salad some extra heft.

The rest of the afternoon was uneventful and lazy.
At one point Derek and I did manage to make it to Publix where he discovered he has successfully gained back a couple of pounds. For the past couple of weeks Derek has learned the importance of a real breakfast and lunch. He now has more energy after work and doesn’t automatically want to pass out as soon as he gets home.
At Publix I kept asking Derek what he wanted for dinner, but he told me he wanted what ever concoction I was thinking up in my head. I happened to have an idea for a meal that I wanted to try, so I went with it.

My BBQed Tempeh, Sweet Potato and Apple creation was HangryPants inspired.
On the stove top I heated up Tempeh, Sweet Potato, Apple and Onion. Once everything was soft I doused it in BBQ sauce and cooked it for another 10 minutes on low heat.
It came out amazing!

Derek even went back for seconds!
On the side I made a quick and easy homemade coleslaw.

For the coleslaw I coated a bag of broccoli slaw with a combination plain oikos, honey mustard, vinegar and some garlic salt. The slaw marinated in the fridge for an hour. It was still a little crunchy and not heavy like traditional coleslaw. I prefer my homemade version of a heavy store version any day of the week.
I was missing fruit today just as much as I was missing veggies. Dessert tonight was required to fill that void.

Mini- micorwavable Peach Cobbler -1/2 a peach sprinkled with cinnamon, nuked for 1 minute then topped with granola and ice cream.

Simple and delicious.
I’ve missed out on way to much sleep this weekend – now its my turn to make it up. As soon as i hit publish I am passing out. I can’t wait.
