Operation Beautiful

I was depressed for no reason at all this afternoon. In an effort to help cheer myself up I stopped at Publix to post these Operation Beautiful notes.

Acorn Squash and Mushroom Gravy Quesadilla

I had the BEST lunch today! It was proof positive that left overs still rock the next day and don’t have to be boring. ;)

Case in point: the wonderful Acorn Squash and Mushroom Gravy Quesadilla that took up the majority of my plate.

I filled a whole wheat tortilla with left over roasted acorn squash and mushroom gravy that had thickened beautifully over night. I folded the quesadilla and grilled it panini style on the george foreman.

The two flavors combined into a very fall like quesadilla. I even think the gravy tasted better today then yesterday. The leftover gravy that didn’t make it into the quesadilla I ate cold straight from the container with a spoon. Yum!

On the side I enjoyed Okra Fries dipped in Ketchup.

I didn’t have time to bake the fries, so I quickly grilled them on the george foreman. It was just enough to heat them up and leave a nice crunch.

Mid-morning I nibbled on a 1/4 cup of Mixed Nuts.

Plan B…

Turns out meeting up with the Orlando Runner’s Club for my long run on Sunday was really a blessing in disguise!

I had a mini panic attack when I realized I would have to be completing some of my longer marathon training runs on my own. I always find any double digit or higher training runs to be mentally challenging when I am on my own. I could already hear the mental excuses building up in my mind.

Thankfully Jack, who organizes the weekly run, heard that I would be training for the Disney Marathon and mentioned a few others in the group were in training for marathons in the near future as well.

He e-mailed a spreadsheet containing what weeks and how many miles people are planning to run so that I can hopefully pair up with someone running a similar distance each Sunday.

I feel this big rush of relief now knowing I will never be running a long run on my own.

My advice if you are training for a marathon yourself – check out the local runner’s club. They offer a great foundation of support and running with them makes the miles fly by.

Busy Weekend Ahead

It’s finally Friday and I can’t wait for the weekend to start! Derek is driving over tonight and we have a pretty packed schedule almost as soon as he arrives. Dinner at Pizza Fusion (Yum!!)
