Campbell’s V8 Garden Vegetable Soup Giveaway

by Meghann on October 6, 2009

The other week I was contacted by a representative of Campbell Soup Company to sample and review Campbell’s V8 Garden Vegetable Blend Soup for my blog.

IMG_3098

I love all things soup and was pleasantly surprised by the fairly recognizable ingredient list on the packaging.

IMG_3099

As well as the decent nutritional stats – minus the sodium content of course.

IMG_3100

I had a serving of the Vegetable Soup topped with Spaghetti Squash Seeds on the side of a yummy grilled cheese for lunch.

IMG_3102

I went against my natural instincts to pile my sandwich high with every vegetable in the fridge and instead went for simple. Between two slices of Nature Pride 12 Grain Bread I had 1 slice of Mozzarella Cheese, Tomato, Fresh Basil, Spinach, Banana Peppers and a drizzle of Balsamic Vinegar. I grilled my creation on the george foreman.

IMG_3104

The true star of this sammie was the drizzle of balsamic vinegar. It gave a great sweet touch that blended perfectly with the classic mozzarella, tomato and basil combination.

IMG_3106

I hate to say it, but the soup was just ok. I had really high hopes for the creamy, thick soup, but one bite and I was instantly reminded of canned vegetable soup. It had no flavor, none of the veggies really stood out and it kept reminding me of the soups I refused to eat when I was little before I realized soup can actually taste good.

IMG_3108

On the plus side each serving of the vegetable soup contains a lot of great nutrients and a full serving of vegetables in every bowl. I think if I were to have this soup again I would simply doctor it up to make it more flavorful and less boring.

IMG_3113

Of course you don’t have to take my word for it. You can try the soup yourself. Who knows you may think it’s the best thing in the world.

i LOVE canned soup but i have a heart condition an i am on a 2000 mg salt diet…. when you have a bowl of soup you get so much sodium and its so not worth it most of the time.

2 Julie @savvyeats October 6, 2009 at 1:54 pm

My favorite veggie dish has to be green beans sauteed in a little bit of olive oil with garlic, cayenne, and a dash of salt. So simple, yet so good!

3 Katie October 6, 2009 at 1:55 pm

My favorite vegetable is…well, I don’t really like vegetables so I like eating them with anything that makes them palatable. Recently my favorite is zucchini chips (zucchini coated in thin layer of bread crumbs/parm cheese and baked until somewhat crispy).

4 Julia October 6, 2009 at 1:55 pm

My all time favorite veggie is definitely sweet potato. I love it baked with a little bit of brown sugar, some kosher salt, and a tiny bit of butter.

5 greenbean October 6, 2009 at 1:57 pm

tough question! i’ll go with whats a favorite right now. thats gotta be brussel sprouts. tossed in OO and salt and roasted in the oven.

6 Ashley October 6, 2009 at 1:57 pm

My favorite veggie hands down is the sweet potato. I don’t even need to doctor it up with sugar or butter…straight up is good for me! 🙂

7 Stephanie October 6, 2009 at 2:02 pm

I love V8 juice but have never tried their soups…now would be a great opportunity for that! 🙂

8 Molly October 6, 2009 at 2:04 pm

I love any veggies fresh, just the way they are…but bell peppers cooked into a tomatoey marinara sauce gets me every time 🙂

9 Meg October 6, 2009 at 2:05 pm

I’ve never tried that kind – but I do enjoy their tomato soup, and V8’s Spicy Hot Veggie Juice 😛

My fave veggie would have to be sweet potato or butternut squash, I can’t decide!

Enjoy your Tuesday!

10 Amber October 6, 2009 at 2:06 pm

My favorite vegetable is zucchini but a close second would be okra. Both are very easy to fix and taste good in lots of different dishes. Love your blog!

11 Amy October 6, 2009 at 2:07 pm

Brussel sprouts with a drizzle of olive oil, shake of S and P and then roasted in the oven. Amazingly good!

17 Katie October 6, 2009 at 2:14 pm

My favorite vegetable is butternut squash. I love it baked into fries or blended into creamy soups!

18 Jean October 6, 2009 at 2:16 pm

hmmm….so many good vegetables.

Sweet potatos, sliced, and tossed in EVOO, Paprika, and sea salt and baked at 350 for an hour. They make the tastiest french fries! 🙂

19 Whitney @ Lettuce Love October 6, 2009 at 2:17 pm

T ough question! My favorite veggie has to be broccoli — I have loved it forever. It is boring, I know, but my favorite was to prepare it is to simply steam.

20 Allie (Live Laugh Eat) October 6, 2009 at 2:17 pm

Eggplant!! I love it grilled on its own, in paninis, on top of salads…the list goes on!

I am the BSI host for this week, Meghann!! Check it out and I’d love for you to participate…only if you have time, of course. I know you are busy busy!

21 Evan Thomas October 6, 2009 at 2:17 pm

Steamed broccoli. I think I have it everyday, which is fine since it’s a great, light veggie with calciyum

22 BethP October 6, 2009 at 2:17 pm

Right now my favorite veggie is corn–I made this outstanding corn chowder the other night: http://www.wholeliving.com/recipe/white-cheddar-corn-chowder

23 Lucy October 6, 2009 at 2:17 pm

Sweet potato fries, so easy and lovely sprinkled with sea salt!

24 Alison October 6, 2009 at 2:18 pm

I have been on the lookout for a good vegetable soup, so I wouldn’t mind trying this one.

My favorite vegetable? I love a lot of them, but most recently it has been the sweet potato – baked & topped with cinnamon – yum!

25 Marcie October 6, 2009 at 2:18 pm

I saute hearts of palm in a little butter and serve with bbq sauce–delish!

26 Bill October 6, 2009 at 2:19 pm

Hmmm, probably eggplant,I slice it thin and top it off with marinara and low fat cheese

27 Lindsay October 6, 2009 at 2:19 pm

my favorite veggie dish broccoli – served anyway!

28 Allie October 6, 2009 at 2:19 pm

Spaghetti squash is yummy, just steam and take a fork to spoon out the strands, serve with butter, olive oil or your fave pasta sauce@

29 Carol October 6, 2009 at 2:19 pm

I really like carrots, I eat them plain–no prep involved!!!

30 Danielle October 6, 2009 at 2:20 pm

Butternut squash baked in the oven until it’s very soft…either served plain or with a little cinnamon or butter.

31 Anne October 6, 2009 at 2:20 pm

I don’t discriminate, I love all my veggies! If I had to choose I guess I would say artichokes, steamed and dipped in butter 🙂

32 MB October 6, 2009 at 2:20 pm

For me, I love green beans that are lightly blanched, they are crispy like fries and taste great with a low fat sour cream dip (or on their own!)

33 Allison R. October 6, 2009 at 2:20 pm

Steamed broccoli! Not very exciting, but always delicious!

34 Leianna October 6, 2009 at 2:21 pm

favorite veggie is broccoli and I love it steamed with some BBQ sauce for dipping, YUM!

35 Katherine October 6, 2009 at 2:21 pm

My favorite veggie is my mom’s “fried” green beans – really they’re just sauteed with EVOO but they’re AMAZING.

36 Ashlee October 6, 2009 at 2:22 pm

I absolutely love raw veggies, but kale ‘chips’ and butternut squash ‘fries’ are probably my favorite for the moment. But, I also cannot turn down veggies on the grill, especially the mushrooms. This is making me very hungry!

37 cookingforaveganlover October 6, 2009 at 2:22 pm

My favorite vegetable is brussel sprouts and i love to shred them and stir fry with salt, pepper and earth balance and put it on top of whipped parsnips!

38 busylittlelexi October 6, 2009 at 2:22 pm

I love cabbage: shredded, sauteed, & tossed in soy sauce. Yummy!

39 jeannie962 October 6, 2009 at 2:23 pm

Asparagus — grilled. Mmmmm so good!!!

40 cookinfanatic October 6, 2009 at 2:23 pm

41 Caitlin in MD October 6, 2009 at 2:24 pm

Asparagus…roasted with olive oil, parmesan, salt, and pepper.

42 trinichiqn October 6, 2009 at 2:24 pm

43 Megan October 6, 2009 at 2:26 pm

YUMMM I love acorn squash baked in the oven with apple, cinnamon, and a little bit of butter.

44 caffeinerd October 6, 2009 at 2:26 pm

My favorite vegetable is asparagus. I usually roast it at 450 for about 15 minutes with feta tossed over it.

45 Angie (Losing It and Loving It) October 6, 2009 at 2:26 pm

Oh your sandwich looks and sounds good!

My favorite veggie is roasted brussel sprouts. I linked my name to the recipe if you’re interested. I also make asparagus the same way and love that veggie too.

46 Emily October 6, 2009 at 2:27 pm

Hi Meghann! My favorite veggie is definitely broccoli and I think my favorite way to prepare it would be with peanut sauce. The broccoli really absorbs the sauce and its delicious! 🙂

47 Kristine October 6, 2009 at 2:27 pm

I actually love the Campbell’s v8 Butternut Squash soup! I just prepare it “as is” and it is still so flavorful!

48 Lisa October 6, 2009 at 2:27 pm

My favorite veggie is zucchini (if I really must pick only one!) and I saute it with EVOO and garlic! My favorite raw veggie though is definitely a red bell pepper!

49 Kate October 6, 2009 at 2:28 pm

I love bell peppers, cut up and eaten raw! I have actually eaten a bell pepper like an apple once – I weirded out my coworkers, but it was still tasty!

I have some of this soup but I haven’t tried it yet! Maybe you can add some chopped, steamed veggies to it to make it a little tastier for you!

50 Rachel October 6, 2009 at 2:28 pm

Carrots in absolutely ANY form! YUM! I also love mushrooms, asparagus, tomatos, squash (all forms), green beans… Not in any particular order.

51 Dani October 6, 2009 at 2:28 pm

I love, love, love vegetables….making it hard to pick one. I think a stand out would be roasted brussel sprouts with s + p…or steamed artichokes!

52 Jessica October 6, 2009 at 2:29 pm

I hate vegetables. I guess that counts me out. But I do like corn on the cob?? lol.

53 Leah October 6, 2009 at 2:29 pm

Was I the only one giggling at the pens?

lol.

Um, my fav veggie is hard. Normally, I would say I love zucchini but the other day, I made the most amazing chili-roasted carrots that are definitely in my top spot right now.

Uh-mazing.

54 Liz October 6, 2009 at 2:30 pm

Sweet potatoes — love them baked in the oven.

55 daisy melo October 6, 2009 at 2:31 pm

I love butternut squash fries. just cut them and bake!

56 katecooks October 6, 2009 at 2:31 pm

i think my favorite veggie might be corn on the cob?! just lightly salted 🙂 but that’s a tough call! im an equal veggie lover 🙂

57 Emily Elizabeth October 6, 2009 at 2:31 pm

My fav veggie is corn on the cob! I love to grill it with creole seasoning!! Yum yum. Thanks for the chance to win the soup. I love these soups the roasted red pepper is a must try!

58 catiechurch October 6, 2009 at 2:33 pm

My favorite veggie has to be spinach. I love to put it on my pizza or as a salad with some salsa and a few chips.

59 Ashley October 6, 2009 at 2:33 pm

I can’t pick just one but I love to ROAST them. Great with zucchini, onions, mushrooms, peppers, etc. So sweet!

60 Eileen October 6, 2009 at 2:33 pm

any veggie that you can dab with a little olive oil, sprinkle with salt and pepper and roast in the oven for 15 minutes! especially zucchini or asparagus

61 Sarah October 6, 2009 at 2:34 pm

I cook cabbage literally every other night (that’s probably embarrassing… whatever.), and it is absolutely my favorite vegetable. I’ll cook another veggie with it, such as asparagus or zucchini or eggplant, but cabbage is always the staple. It’s so simple, too – chop up the head to your liking (I usually do a large shred), spray a pan, put cabbage in said pan, crank up the heat to med-high, and after some stirring and wilting and seasoning-adding, voila! DELICIOUS. My mom always tells me it’s the Slovak in me that makes me love it so much. 🙂

62 One Healthy Apple October 6, 2009 at 2:36 pm

I love fresh asparagus roasted with salt and pepper and little bit of olive oil- nice and crispy in the oven!

63 rhodeygirltests October 6, 2009 at 2:38 pm

Cucumbers. Simply sliced and salted. yum.

Or arugula in a salad. But don’t count me in the contest, I think soup where natural flavoring is “milk” is weird. Thoughts???? I wonder why those ingredients are necessary when there are so many other boxed soups on the market that don’t have the weird stuff.

64 Sarah October 6, 2009 at 2:38 pm

This is too hard! Summer: Grilled onions and Zuchinni
Winter: Homemade veggie soup! Potatoes, carrots, lima beans, peas, corn, barley, beans!

65 Holly October 6, 2009 at 2:39 pm

Cool giveaway Meghann! My favorite veggie…tough. I’d have to say asparagus or broccoli. Both are great roasted with a touch of olive oil, garlic, and s&p. And I love steamed broc too!

66 Laura October 6, 2009 at 2:39 pm

Carmelized Cabbage! It is so fantastic. You just chop a head of red cabbage and add to a sautee pan with olive oil and let it cook down. The cabbage is the best once it starts to carmelize and brown. You don’t even need to season it!

For a normal sized serving I usually use 1/4 a head of cabbage, but I’ve been known to eat 1/2 a head from time to time 🙂

67 Mellissa October 6, 2009 at 2:40 pm

I was laughing at the pens too 😉 My favorite veggie is Raw Pea Pods, I love the crunch!

68 ashley October 6, 2009 at 2:40 pm

sauteed zucchini with garlic, salt, and pepper! Holy yum!

69 Kyo October 6, 2009 at 2:40 pm

My current favorite vegetable is acorn squash, just cubed up and baked. I don’t think I could pick a real favorite now… I like every vegetable I’ve tried so far, but as a kid it would have been spinach.

I’m not sure about this soup but Campbell’s V8 Garden Broccoli and Butternut Squash soups are really good, so I would like to try this. I don’t think I’ll win it but… *hopes*

70 foodcents October 6, 2009 at 2:42 pm

Any veggie grilled, veggies are good, but so much better off the grill.

The Brocolli soup is pretty good, for future reference.

71 Andrea October 6, 2009 at 2:42 pm

Asparagus tossed with balsamic, olive oil, garlic, S&P and roasted in the oven!

72 Lauren October 6, 2009 at 2:42 pm

Asparagus – just a tiny bit of olive oil and put in in the pan on the stove! easy easy easy. I might put some seasonings (salt/pepper) on it, but most of the time I just love to taste my veggies plain!

73 Diana October 6, 2009 at 2:42 pm

I honestly don’t like canned soup. Homemade all the way. 🙂

74 AshleyP October 6, 2009 at 2:43 pm

I could never get sick of roasted asparagus! It’s definitely my favorite veggie, especially with a little lemon juice and pepper 🙂 Great giveaway!

75 live.laugh.love.(and eat.) October 6, 2009 at 2:44 pm

Roasted asparagus is absolutely my fav!!!

76 C. October 6, 2009 at 2:44 pm

my newest favorite veggie is BEETS!! i love them just boiled (like a potatoe!) and then chopped up in my salads!! Makes my salads PINK (and my pee red :/) but also adds great flavor!

77 Caitie October 6, 2009 at 2:46 pm

Easy. Favorite veggie(/my breakfast EVERY morning for the past 3 weeks) is butternut squash roasted with lots of cinnamon, served right out of the oven in a bowl with greek yogurt, flax meal, almonds, berries, more cinnamon, and a little TJs grain milk. So. Good.

78 Breanne October 6, 2009 at 2:46 pm

I love ROASTED BROCCOLI!!!! YUMMM!

79 Jennifer October 6, 2009 at 2:47 pm

I can’t really choose between one vegetable. I just love to roast them all together in olive oil, salt & pepper. Delicious!

80 Sam October 6, 2009 at 2:47 pm

My favorite veggie is acorn squash. I just roast it with cinnamon & a tiny bit of butter. Yum.

The V8 tomato soup is way better than the one you got to sample. Boo for not sending you the yummy one.

81 Kathleen October 6, 2009 at 2:48 pm

I heart veggies, especially in veggie packs. I take a sheet of tinfoil, throw sliced baby red potatoes, carrots, onions, pea pods, garlic and peppers inside and then drizzle with Kraft Free Zesty Italian Dressing (1-2 T) and season with salt and pepper. I then bake at 450 degrees 40 min and have tender veggie packs!

82 Karissa October 6, 2009 at 2:48 pm

Well I love almost every veggies, but I put spinach in about everything I eat!

83 Alexa October 6, 2009 at 2:48 pm

My favorite vegetable is zucchini and i like roasting it to dip in kethcup (like french fries) or mixed with other vegetables in olive oil salt pepper and garlic-roasted in the oven again! maybe even a little Parmesan cheese 😉

loveee all vegetable though!

84 Kristie Lynn October 6, 2009 at 2:49 pm

Well, I’m sure my husband would love the soup (Parmesan cheese = not vegan; totally unnecessary for a vegetable soup!), and the rest of the goodies look fun 🙂

My favorite vegetable if I’m eating it plain old is red pepper, but I love roasted brussel sprouts. So good!

85 Kelly October 6, 2009 at 2:50 pm

2 words, Pumpkin oatmeal 🙂

86 Grace October 6, 2009 at 2:51 pm

My favorite veggie is (random) baby corn! I love them in stirfries and salad. They are so fun to eat!

87 Colleen October 6, 2009 at 2:53 pm

Although it may not sound true, my favorite vegetable is brussel sprouts! I love them roasted in the oven.

88 Nicci@NiftyEats October 6, 2009 at 2:56 pm

i love carrots and i enjoy stir frying them and adding them to my meals.

89 Sarah October 6, 2009 at 2:57 pm

Bell peppers and zucchini stuffed and roasted in the oven.

90 soup October 6, 2009 at 2:57 pm

Broccoli!!
I love broccoli salad ( so not healthy, involves mayo, sourcream, shredded cheese and bacon ) or broccoli in a stuffing concoction baked.

91 Sara S October 6, 2009 at 2:58 pm

My favorite vegetable is mushrooms, particularly baby bella mushrooms! I love to put them in scrambled egg whites with sharp cheddar cheese melted on top…. mmmmm…

92 Danielle October 6, 2009 at 2:58 pm

My favorite vegetable is spinach! It is so good as fresh baby leaves in a salad, mixed up in a smoothie, or use the frozen kind w/ balsamic vinegar and water chestnuts!

93 Mary October 6, 2009 at 2:58 pm

Count me in! I love broccoli– used to be just steamed or tossed with a little EVOO but recently I’ve jumped on the sugared + roasted bandwagon and it is soo yum 🙂

94 Brooke October 6, 2009 at 2:58 pm

Hmm, my favorite veggie is broccoli! I love it roasted, steamed, raw, grilled, etc. I can mix it in pasta, pizza, soups, stews, hummus, etc. Its so versatile! And its super nutritious!

95 Sarah R October 6, 2009 at 2:59 pm

Steamed broccoli with hummus to dip in or grilled green beans and cherry tomatoes. Or raw carrots with nut butter… I can’t choose!

96 Theresa October 6, 2009 at 3:01 pm

I’d have to go with steamed green beans or boiled turnips with just a little salt on top!

97 Ada October 6, 2009 at 3:02 pm

My favorite vegetable would be butternut squash roasted in the oven and served as “fries”. Delish!

98 Morgan @ Life After Bagels October 6, 2009 at 3:03 pm

my favourite vegetable is steamed broccoli and cheese, boring I know, but oh man so delicious, okay I wish I was eating some right now . . . you know what I do for a simple way to make home mad soup, put a can or package of soup in a pot, then add more water and vegetables, it’s still kind of homemade, but with fresher ingredients . . . plus doubling the liquid quantity with water takes the salt down

99 Kristen October 6, 2009 at 3:05 pm

Steamed brussel sprouts with a generous serving of parm cheese sprinkled on top! Yummy!!!!!!

100 aileen October 6, 2009 at 3:06 pm

Hi Meghann.

I’ve been following your blog since your POST San Diego Rock n Roll Maarathon entry. I too ran that marathon (my first marathon as well) and had googled it to see if anyone had any reviews about it. I loved every minute of the race and its funny because I must have seen you on the course because my finish time was 4:13:44.

After reading your post I was amazed to see how much we had in common about healthy eating views AND life POST college and working the office 9-5 job. I graduated from college in 2006 and since then have been attached to the computer for 8 hours a day… avoiding all the candy and snacks we have all around the office!

Anyway, I could really use a new pedometer so I thought I give your give away a chance. I LOVE broccoli and Iove it steamed with a pinch of salt and pepper for flavor. A matter of fact that is what I’m having lunch today along with steamed yellow squash and asparagus. I know you must be planning dinner already, but its only noon here in southern cali.

Best,
aileen

101 Matt October 6, 2009 at 3:07 pm

Steamed brocolli with cheese!

102 Laura S October 6, 2009 at 3:07 pm

Eggplant.. I love roasting and then topping with pizza sauce!

103 Erin October 6, 2009 at 3:11 pm

Oooh… I love ALL vegetables! But one of my favorites is roasted sweet potato. Drizzle with a little EVOO, a dash of salt & pepper, and into the oven for 15-20 min. So crispy and yum!

104 amanda @ fake ginger October 6, 2009 at 3:11 pm

I love those veggie shaped pens, so cute!

My favorite veggie is roasted asparagus with just a little salt and pepper.

105 Deb October 6, 2009 at 3:12 pm

My favorite vegetable would be brussel sprouts. I like them baked or just nuked!!

106 Rachel October 6, 2009 at 3:14 pm

It is so hard to pick a favorite vegetable….I love big salads loaded with tons of veggies. If I have to pick just one – asparagus!

107 angieinatlanta October 6, 2009 at 3:14 pm

I love those soups! They’re surprisingly tasty! And great with a sandwich for a nice, fall lunch!

I love baby spinach; I honestly eat it every day.

108 Amanda October 6, 2009 at 3:14 pm

I haven’t met a vegetable I didn’t like, but one of my favorite veggie dishes is mashed cauliflower with a little bit of liquid smoke and nutritional yeast thrown in!

109 Mary October 6, 2009 at 3:14 pm

Sweet Potatoes! I love making sweet potato fries or just baking it and topping with almond butter:)

110 Lauren October 6, 2009 at 3:16 pm

It’s hard to choose but my longterm favorite has been eggplant! I love eggplant parm.! Also broccoli, green beans and zucchini are faves of mine!

111 Amanda October 6, 2009 at 3:16 pm

113 Laura October 6, 2009 at 3:18 pm

my favorite veggie is brussel sprouts! i used to hate them as a kid, but now I cant get enough 🙂

114 Jaimie October 6, 2009 at 3:18 pm

I really like their butternut squash and southwestern corn varieties of this soup. I haven’t tried the vegetable so maybe it’s not as good as those other two, but given that I like the other two I think it’d be worth at try!

115 Brea October 6, 2009 at 3:19 pm

My favorite vegetable is Sweet Potatoes, i like to make them into fries, so I coat them with olive oil, sea salt, paprika, and pepper. Bake them in the oven for 30 minutes (turning them halfway through). I also enjoy baked acorn or butternut squash!

116 Julie October 6, 2009 at 3:19 pm

Steamed broccoli! I love broccoli in any way, shape or form but steamed is the way to go.

117 Molly October 6, 2009 at 3:20 pm

I love steamed broccoli with scrambled eggs and a bit of cheese for breakfast. Delicious!

118 Tiffany J. October 6, 2009 at 3:20 pm

It’s SO hard to pick just one…but because it’s fall (and cold where I am at) I am going with squash! I love baked squash! MMMM! I may have just solved my dinner dilema!

119 Emily @ My Chubby Confessions October 6, 2009 at 3:22 pm

My favorite veggie is Butternut Squash. I LOVVVVE making fries out of them. Cut them into fry like wedges, drizzle a bit of EVOO on top and sprinkle with lemon pepper and salt seasoning. Bake at 425 until they become the crispness you want! =]

I could seriously make a meal out of these. My mom, who is not a veggie loving person, ask for these whenever she comes over!

120 allisonleigh October 6, 2009 at 3:22 pm

I really really really like sauteed onions. I know it seems so simple and sort of odd, but they make the best sandwich toppers, pizza topper, go well in stir-fry, soups and over chicken or steak(if you eat meat). There is just something so satisfying about piling a bunch of sauteed onions on to give a lot of great flavor without a whole lot of calories!
Cool giveaway!

121 Maria Ann October 6, 2009 at 3:22 pm

broccoli and I just put olive oil on it and roast it!

so simple, yet so delicious!

122 Alison October 6, 2009 at 3:27 pm

125 Christine October 6, 2009 at 3:29 pm

My favorite vegetable is butternut squash the way my aunt prepares it. Im not sure exactly how its made, but I think she boils it, mashes it up, and simmers it with lots of onion, some butter, a little salt, and a splash of milk and then serves it over rice. Its sooo good! 🙂

126 Janelle October 6, 2009 at 3:29 pm

Sweet Potatoes, sliced into fries and tossed with olive oil, and grilled till crispy!

127 Tracey @ tropicalhappiness October 6, 2009 at 3:30 pm

My fav… broccoli. Steamed just enough to cook, but still very crunchy. Plain, with a bit of salt. Boring, but delicious

128 Amanda October 6, 2009 at 3:30 pm

So hard to choose a favorite! The first I thought of was okra chopped, sauteed, and coated in hot sauce. Yum!

129 Lindsay @ bananaandchocolate October 6, 2009 at 3:30 pm

I can’t pick just one favorite vegetable. I love roasted broccoli but also love grilled squash and zucchini.

130 Lisa October 6, 2009 at 3:33 pm

A vegetable that I remember growing up as a bland soggy mess the way my mom cooked it – but cooked the right way, cauliflower, roasted w/ S&P and a drizzle of olive oil, is delicious!

132 Heather O'donnell October 6, 2009 at 3:37 pm

My favorite veggie soup is a staple every winter. I take a bunch of potatoes (from my mom’s garden) and cube them up and throw them in the slow cooker with some white wine and tarragon vinegar. And wild rice if I have it. Then I’ll add an onion or two, some carrots (red, white and orange), some zucchini (all from my mom’s garden) and a can of corn. Or, whatever else I have lying around. Let it all cook together with some garlic and basil and serve it with some crusty bread. Yummy.

133 Cathy October 6, 2009 at 3:38 pm

My favorite vegetable is spinach. it goes with everything! Eggs, salads, cheese, etc. My favorite way to have it is sauteed with olive oil and garlic.

134 Nicole October 6, 2009 at 3:39 pm

I love asparagus! When I was a kid, I liked the canned kind but now I only like fresh. I sprinkle sea salt, pepper and various herbs depending on my mood and what other dishes I’m preparing. Then I roast them until they are tender crisp. Perfect every time!

135 Sheri October 6, 2009 at 3:39 pm

I love all veggies really! But right now I love, love sweet potatoes. I like to cut them into fries and bake in the oven until crispy! Yum!

136 Meghann October 6, 2009 at 3:40 pm

I’ve never tried their Vegetable soup, BUT I really really liked the Southwestern Corn !

It’s got the taste and thickness of a creamed corn soup, but way, WAY healthier!

My favorite vegetables are sugar snap or snow peas. Just steamed, with a bit of sea salt, please!

137 risrocksout October 6, 2009 at 3:41 pm

that’s disappointing – living in a dorm, one of my staples is shelf stable soup/broth that i always doctor with tons of frozen veggies and lots of garlic/italian seasoning!

My current veg obsession is using steamed spinach as a base for my dining hall meals (just nuke a HUGE PILE of it for 30 seconds) then when i do tastes of a few different things it absorbs all the flavors – or if stuff’s not ‘saucy’ i just add a gob of hummus! so good and an easy way to add in greens when you’re in a ‘hot food’ mood – i don’t really crave salad in the winter but this hits the spot!

138 Hallie October 6, 2009 at 3:41 pm

I can’t pick a favorite! Probably tied zuchinni and broccoli. And organic carrots. And arugula. And the best way to have most veggies is GRILLED. Period 😀

139 Holly October 6, 2009 at 3:42 pm

Favorite veggie? Sweet potato! I love it with some greek yogurt and some spices. YUM.

140 ~carolyn~ October 6, 2009 at 3:43 pm

Probably sweet potato. I make fries and I make them spicy…cayenne, garlic, chili powder, cumin and then sprinkled with cinnamon and dipped in a little catsup. Excellent. Zucchini is a close runner up, sauteed with garlic and some basil and then sprinkled with parm! yum

sweet potato fries!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!! 😉

147 Brooke October 6, 2009 at 4:00 pm

My favorite vegetable has to be cho-cho a squash like fruit (I know you said vegetable but it is squash like!). The sad thing is you can rarely find it in the United States because it is a Jamaican vegetable. Regardless if you are lucky enough to get your hands on one, stuffed cho-cho is one of the easiest and most delish dishes ever. All you need is to cut the cho-cho in half and bake it then scrape out the insides and set aside, mix the inside meat with onion garlic and cheese and place back in the oven! Amazing.

148 krittie October 6, 2009 at 4:00 pm

I first fell in love with them in fry form- we often cut them into wedges and bake with a light EVOO, chili powder, and garlic powder coating and they are super good! Lately I have just been admiring the sweet potato in it’s simplicity. Just a little smart balance and it’s so great! 🙂

174 Jamie October 6, 2009 at 4:43 pm

My favorite vegetable is probably spinach and I prepare it in many ways but my most favorite would be a simple spinach salad.

Also, I love V-8’s other soups like the butternut squash and the tomato so you might want to give them a shot. I do tend to doctor them up with spices because I like everything ridiculously spicy so I’m not sure how bland they are without my additions. I just like how hearty these soups are and I was also pleasantly surprised by the nutritional information (even the sodium is better than most canned soups)

175 Abbey October 6, 2009 at 4:52 pm
