Campbell’s V8 Garden Vegetable Soup Giveaway

The other week I was contacted by a representative of Campbell Soup Company to sample and review Campbell’s V8 Garden Vegetable Blend Soup for my blog.

I love all things soup and was pleasantly surprised by the fairly recognizable ingredient list on the packaging.

As well as the decent nutritional stats – minus the sodium content of course.

I had a serving of the Vegetable Soup topped with Spaghetti Squash Seeds on the side of a yummy grilled cheese for lunch.

I went against my natural instincts to pile my sandwich high with every vegetable in the fridge and instead went for simple. Between two slices of Nature Pride 12 Grain Bread I had 1 slice of Mozzarella Cheese, Tomato, Fresh Basil, Spinach, Banana Peppers and a drizzle of Balsamic Vinegar. I grilled my creation on the george foreman.

The true star of this sammie was the drizzle of balsamic vinegar. It gave a great sweet touch that blended perfectly with the classic mozzarella, tomato and basil combination.

I hate to say it, but the soup was just ok. I had really high hopes for the creamy, thick soup, but one bite and I was instantly reminded of canned vegetable soup. It had no flavor, none of the veggies really stood out and it kept reminding me of the soups I refused to eat when I was little before I realized soup can actually taste good.

On the plus side each serving of the vegetable soup contains a lot of great nutrients and a full serving of vegetables in every bowl. I think if I were to have this soup again I would simply doctor it up to make it more flavorful and less boring.

i LOVE canned soup but i have a heart condition an i am on a 2000 mg salt diet…. when you have a bowl of soup you get so much sodium and its so not worth it most of the time.

My favorite veggie dish has to be green beans sauteed in a little bit of olive oil with garlic, cayenne, and a dash of salt. So simple, yet so good!

My favorite vegetable is…well, I don’t really like vegetables so I like eating them with anything that makes them palatable. Recently my favorite is zucchini chips (zucchini coated in thin layer of bread crumbs/parm cheese and baked until somewhat crispy).

My all time favorite veggie is definitely sweet potato. I love it baked with a little bit of brown sugar, some kosher salt, and a tiny bit of butter.

My favorite veggie hands down is the sweet potato. I don’t even need to doctor it up with sugar or butter…straight up is good for me! :)

I love any veggies fresh, just the way they are…but bell peppers cooked into a tomatoey marinara sauce gets me every time :)

I’ve never tried that kind – but I do enjoy their tomato soup, and V8′s Spicy Hot Veggie Juice :P

My fave veggie would have to be sweet potato or butternut squash, I can’t decide!

My favorite vegetable is zucchini but a close second would be okra. Both are very easy to fix and taste good in lots of different dishes. Love your blog!

Brussel sprouts with a drizzle of olive oil, shake of S and P and then roasted in the oven. Amazingly good!

Okra!!! I love it roasted in the oven with salt or cut up and cooked with a can of fire roasted diced tomatoes. Holy Yum!

hmmm….so many good vegetables.

Sweet potatos, sliced, and tossed in EVOO, Paprika, and sea salt and baked at 350 for an hour. They make the tastiest french fries! :)

I have been on the lookout for a good vegetable soup, so I wouldn’t mind trying this one.

My favorite vegetable? I love a lot of them, but most recently it has been the sweet potato – baked & topped with cinnamon – yum!

Spaghetti squash is yummy, just steam and take a fork to spoon out the strands, serve with butter, olive oil or your fave pasta sauce@

For me, I love green beans that are lightly blanched, they are crispy like fries and taste great with a low fat sour cream dip (or on their own!)

I absolutely love raw veggies, but kale ‘chips’ and butternut squash ‘fries’ are probably my favorite for the moment. But, I also cannot turn down veggies on the grill, especially the mushrooms. This is making me very hungry!

I love squash. A little evoo and some of mrs dash seasonings in the oven at 350 for 15 to 20 for a single serving. Yummmmmm!!!!

Hi Meghann! My favorite veggie is definitely broccoli and I think my favorite way to prepare it would be with peanut sauce. The broccoli really absorbs the sauce and its delicious! :)

I love bell peppers, cut up and eaten raw! I have actually eaten a bell pepper like an apple once – I weirded out my coworkers, but it was still tasty!

I have some of this soup but I haven’t tried it yet! Maybe you can add some chopped, steamed veggies to it to make it a little tastier for you!

Um, my fav veggie is hard. Normally, I would say I love zucchini but the other day, I made the most amazing chili-roasted carrots that are definitely in my top spot right now.

I cook cabbage literally every other night (that’s probably embarrassing… whatever.), and it is absolutely my favorite vegetable. I’ll cook another veggie with it, such as asparagus or zucchini or eggplant, but cabbage is always the staple. It’s so simple, too – chop up the head to your liking (I usually do a large shred), spray a pan, put cabbage in said pan, crank up the heat to med-high, and after some stirring and wilting and seasoning-adding, voila! DELICIOUS. My mom always tells me it’s the Slovak in me that makes me love it so much. :)

Or arugula in a salad. But don’t count me in the contest, I think soup where natural flavoring is “milk” is weird. Thoughts???? I wonder why those ingredients are necessary when there are so many other boxed soups on the market that don’t have the weird stuff.

Carmelized Cabbage! It is so fantastic. You just chop a head of red cabbage and add to a sautee pan with olive oil and let it cook down. The cabbage is the best once it starts to carmelize and brown. You don’t even need to season it!

For a normal sized serving I usually use 1/4 a head of cabbage, but I’ve been known to eat 1/2 a head from time to time :)

My current favorite vegetable is acorn squash, just cubed up and baked. I don’t think I could pick a real favorite now… I like every vegetable I’ve tried so far, but as a kid it would have been spinach.

I’m not sure about this soup but Campbell’s V8 Garden Broccoli and Butternut Squash soups are really good, so I would like to try this. I don’t think I’ll win it but… *hopes*

Asparagus – just a tiny bit of olive oil and put in in the pan on the stove! easy easy easy. I might put some seasonings (salt/pepper) on it, but most of the time I just love to taste my veggies plain!

my newest favorite veggie is BEETS!! i love them just boiled (like a potatoe!) and then chopped up in my salads!! Makes my salads PINK (and my pee red :/) but also adds great flavor!

Easy. Favorite veggie(/my breakfast EVERY morning for the past 3 weeks) is butternut squash roasted with lots of cinnamon, served right out of the oven in a bowl with greek yogurt, flax meal, almonds, berries, more cinnamon, and a little TJs grain milk. So. Good.

I heart veggies, especially in veggie packs. I take a sheet of tinfoil, throw sliced baby red potatoes, carrots, onions, pea pods, garlic and peppers inside and then drizzle with Kraft Free Zesty Italian Dressing (1-2 T) and season with salt and pepper. I then bake at 450 degrees 40 min and have tender veggie packs!

My favorite vegetable is zucchini and i like roasting it to dip in kethcup (like french fries) or mixed with other vegetables in olive oil salt pepper and garlic-roasted in the oven again! maybe even a little Parmesan cheese ;)

Well, I’m sure my husband would love the soup (Parmesan cheese = not vegan; totally unnecessary for a vegetable soup!), and the rest of the goodies look fun :)

My favorite vegetable if I’m eating it plain old is red pepper, but I love roasted brussel sprouts. So good!

Hmm, my favorite veggie is broccoli! I love it roasted, steamed, raw, grilled, etc. I can mix it in pasta, pizza, soups, stews, hummus, etc. Its so versatile! And its super nutritious!

my favourite vegetable is steamed broccoli and cheese, boring I know, but oh man so delicious, okay I wish I was eating some right now . . . you know what I do for a simple way to make home mad soup, put a can or package of soup in a pot, then add more water and vegetables, it’s still kind of homemade, but with fresher ingredients . . . plus doubling the liquid quantity with water takes the salt down

Hi Meghann.

I’ve been following your blog since your POST San Diego Rock n Roll Maarathon entry. I too ran that marathon (my first marathon as well) and had googled it to see if anyone had any reviews about it. I loved every minute of the race and its funny because I must have seen you on the course because my finish time was 4:13:44.

After reading your post I was amazed to see how much we had in common about healthy eating views AND life POST college and working the office 9-5 job. I graduated from college in 2006 and since then have been attached to the computer for 8 hours a day… avoiding all the candy and snacks we have all around the office!

Anyway, I could really use a new pedometer so I thought I give your give away a chance. I LOVE broccoli and Iove it steamed with a pinch of salt and pepper for flavor. A matter of fact that is what I’m having lunch today along with steamed yellow squash and asparagus. I know you must be planning dinner already, but its only noon here in southern cali.

Oooh… I love ALL vegetables! But one of my favorites is roasted sweet potato. Drizzle with a little EVOO, a dash of salt & pepper, and into the oven for 15-20 min. So crispy and yum!

I haven’t met a vegetable I didn’t like, but one of my favorite veggie dishes is mashed cauliflower with a little bit of liquid smoke and nutritional yeast thrown in!

I really like their butternut squash and southwestern corn varieties of this soup. I haven’t tried the vegetable so maybe it’s not as good as those other two, but given that I like the other two I think it’d be worth at try!

My favorite vegetable is Sweet Potatoes, i like to make them into fries, so I coat them with olive oil, sea salt, paprika, and pepper. Bake them in the oven for 30 minutes (turning them halfway through). I also enjoy baked acorn or butternut squash!

My favorite veggie is Butternut Squash. I LOVVVVE making fries out of them. Cut them into fry like wedges, drizzle a bit of EVOO on top and sprinkle with lemon pepper and salt seasoning. Bake at 425 until they become the crispness you want! =]

I could seriously make a meal out of these. My mom, who is not a veggie loving person, ask for these whenever she comes over!

I really really really like sauteed onions. I know it seems so simple and sort of odd, but they make the best sandwich toppers, pizza topper, go well in stir-fry, soups and over chicken or steak(if you eat meat). There is just something so satisfying about piling a bunch of sauteed onions on to give a lot of great flavor without a whole lot of calories!

My favorite vegetable is butternut squash the way my aunt prepares it. Im not sure exactly how its made, but I think she boils it, mashes it up, and simmers it with lots of onion, some butter, a little salt, and a splash of milk and then serves it over rice. Its sooo good! :)

My favorite veggie soup is a staple every winter. I take a bunch of potatoes (from my mom’s garden) and cube them up and throw them in the slow cooker with some white wine and tarragon vinegar. And wild rice if I have it. Then I’ll add an onion or two, some carrots (red, white and orange), some zucchini (all from my mom’s garden) and a can of corn. Or, whatever else I have lying around. Let it all cook together with some garlic and basil and serve it with some crusty bread. Yummy.

I love asparagus! When I was a kid, I liked the canned kind but now I only like fresh. I sprinkle sea salt, pepper and various herbs depending on my mood and what other dishes I’m preparing. Then I roast them until they are tender crisp. Perfect every time!

I’ve never tried their Vegetable soup, BUT I really really liked the Southwestern Corn !

It’s got the taste and thickness of a creamed corn soup, but way, WAY healthier!

My favorite vegetables are sugar snap or snow peas. Just steamed, with a bit of sea salt, please!

that’s disappointing – living in a dorm, one of my staples is shelf stable soup/broth that i always doctor with tons of frozen veggies and lots of garlic/italian seasoning!

My current veg obsession is using steamed spinach as a base for my dining hall meals (just nuke a HUGE PILE of it for 30 seconds) then when i do tastes of a few different things it absorbs all the flavors – or if stuff’s not ‘saucy’ i just add a gob of hummus! so good and an easy way to add in greens when you’re in a ‘hot food’ mood – i don’t really crave salad in the winter but this hits the spot!

Probably sweet potato. I make fries and I make them spicy…cayenne, garlic, chili powder, cumin and then sprinkled with cinnamon and dipped in a little catsup. Excellent. Zucchini is a close runner up, sauteed with garlic and some basil and then sprinkled with parm! yum

I love all veggies! I have to say I do love my carrots and broc steamed with a little salt and parm cheese on them…Sweet potatoe fries in the oven with ketchup is grand as well! I LOVE the V8 Campbell soups! Soup is one of my favorite things to eat. Especially being in Central Illinois where the winters can be brutal! I am keeping my fingers crossed on this one!

My favorite vegetable has to be cho-cho a squash like fruit (I know you said vegetable but it is squash like!). The sad thing is you can rarely find it in the United States because it is a Jamaican vegetable. Regardless if you are lucky enough to get your hands on one, stuffed cho-cho is one of the easiest and most delish dishes ever. All you need is to cut the cho-cho in half and bake it then scrape out the insides and set aside, mix the inside meat with onion garlic and cheese and place back in the oven! Amazing.

Sweet potatoes are incredibly yummy! I first fell in love with them in fry form- we often cut them into wedges and bake with a light EVOO, chili powder, and garlic powder coating and they are super good! Lately I have just been admiring the sweet potato in it’s simplicity. Just a little smart balance and it’s so great! :)

My favorite vegetable is probably spinach and I prepare it in many ways but my most favorite would be a simple spinach salad.

Also, I love V-8′s other soups like the butternut squash and the tomato so you might want to give them a shot. I do tend to doctor them up with spices because I like everything ridiculously spicy so I’m not sure how bland they are without my additions. I just like how hearty these soups are and I was also pleasantly surprised by the nutritional information (even the sodium is better than most canned soups)

It really depends on the time of year, but as it gets colder, I love brussel sprouts and broccoli. I boil them both (from fresh or frozen), add some sauteed red onions and corn, and douse with Maryland’s favorite spice — Old Bay!! :)

I tried the V8 Roasted Red Pepper and Butternut Squash soup and both were seriously delicious.

My favorite vegetable is Eggplant. I love it any way, but one of my favorite was to have it is in Ratatouille. You saute it in a pan, add sauteed zucchini and diced tomatoes. Sprinkle some herbs de Provence, salt and pepper and that’s it! So yummy.

I LOVE LOVE LOVE Oven Roasted Veggies – Any combination will do, but My favorite combinations Must include tomatoes, brussel sprouts, Zucchini and Red Onions. Just toss with herbs/seasonings of choice and Soem garlic and Olive Oil and roast at 425 until crisp

I love tomatoes! Any way! I usually just cut them up and have them for a snack!
I love tomato sandwiches (just toast and a tomato)
Tomatoes on the grill or cooked with a little oil on the stove!

My favorite vegetable would have to be sugar snap peas. I like to steam them and add a little lemon juice for a great fresh side or snack.

I really love my Uncle’s home grown green beans! I boil them until they’re they have the perfect crunch and sprinkle black pepper on top! Yum.

my favorite veggie is brussels sprouts! i saute them in a bit of olive oil, then once they have softened, i add lemon juice, balsamic vinegar and grated cheese of any kind! mmm!

I used to hate brussel sprouts when I was younger, but now I love to eat them! I make different variations, but I definately like to saute them in olive oil and eat them with couscous! :)

i dont think i like that soup either – but my boyfriend is OBSESSED!!! He eats it like 4 times a week!

Steamed brocolli will always be my favorite – i think i eat like 5 heads of brocolli a week!

I did finally try okra this week though – and i liked it! Added it to some homemade veggie soup – soo good!

My favorite veggie is zucchini…and I lOVE to roast it! This soup looks great and I would really love to have a pedometer…it would be interesting to see how much walking I do around the hospital!

My favorite vegetables are cauliflower and carrots! I love roasting cauliflower, and then putting a little Garlic Expressions Salad Dressing on it. As for carrots I will eat them any which way!

I love parsnips in the fall. I like to dress them in a tsp of olive oil and salt and pepper. Then I roast them in the oven at 400 for about 25 minutes. I use mustard as a dipping sauce. So good!

my all time veggie would have to be the sweet potato! So versatile and yummy and the best part of it all.. it can be both sweet and savory! Currently I love making a sweet potato fry sprinkled with a combination of brown sugar cinnamon and cayenne.. so yummy!

Broccoli is my favorite veg – love it simply roasted with garlic.

BTW – the other V8 soups are so much better than the garden vegetable – I especially love the butternut squash one. The corn, red pepper and tomato varieties were also really good!
