Loving my Back

Pizza, Pizza!

But not just any pizza, this is a mushroom cap pizza. Yum!

I started by cleaning the mushroom cap and removing the innards before placing it under the broiler for 5 minutes. I filled the cap with marinara sauce, onion, jalapenos, and banana peppers. It went back under the broiler for 5 more minutes then pulled out and topped off with a slice of mozzarella cheese and spaghetti squash seeds.

The cap pizza was perfectly filling and tasty. It was also easy to pull together for one person without having to worry about left overs.

With my pizza I had 3 Kashi Crackers for a little crunch.

More Pumpkin Ice Cream for dessert. :) This time with a Cran-Bran Vitatop base.

I am afraid to admit it but some how my e-mail landed on the Jeremiah and Brusters mailing list ;) and i just happened to notice both ice cream hot spots have launched a seasonal Pumpkin flavor. Rumor has it TCBY will be sporting their annual pumpkin fro yo treat as well. I need to do a comparative tasting before all the seasonal flavors disappear!

This afternoon there was no pumpkin involved, but there was yogurt and granola. :)

Strawberry Chobani Yogurt and Meg’s Crunchy Granola Mix to be exact.

Yogurt and granola is one of those perfect snacks that taste great and is very filing. This was perfect.

My Current Favorite Body Part…

This may sound a bit superficial but all day I kept checking my back out in my mirror. I just couldn’t get over how in love I am with it at the moment My upper back is toned, tan and beautiful. It has officially moved into my coveted favorite body part spot for the moment.

As I become comfortable in my own skin and learn to appreciate my body for what it is. I find myself falling in love with individual body parts. My calves are strong and defined, my stomach is soft, but I can feel the abs underneath, and my collar bones and shoulders are killer.

No, I’m not conceited – I am just confident and proud of what my body has become. And what it has become is beautiful.

I dare you to go look in a mirror tonight and find the body parts you are currently in love with. Forget the bad and concentrate on the good things! No negativity allowed!

Campbell’s V8 Garden Vegetable Soup Giveaway

The other week I was contacted by a representative of Campbell Soup Company to sample and review Campbell’s V8 Garden Vegetable Blend Soup for my blog.

I love all things soup and was pleasantly surprised by the fairly recognizable ingredient list on the packaging.

As well as the decent nutritional stats – minus the sodium content of course.

I had a serving of the Vegetable Soup topped with Spaghetti Squash Seeds on the side of a yummy grilled cheese for lunch.

I went against my natural instincts to pile my sandwich high with every vegetable in the fridge and instead went for simple. Between two slices of Nature Pride 12 Grain Bread I had 1 slice of Mozzarella Cheese, Tomato, Fresh Basil, Spinach, Banana Peppers and a drizzle of Balsamic Vinegar. I grilled my creation on the george foreman.

The true star of this sammie was the drizzle of balsamic vinegar. It gave a great sweet touch that blended perfectly with the classic mozzarella, tomato and basil combination.

I hate to say it, but the soup was just ok. I had really high hopes for the creamy, thick soup, but one bite and I was instantly reminded of canned vegetable soup. It had no flavor, none of the veggies really stood out and it kept reminding me of the soups I refused to eat when I was little before I realized soup can actually taste good.

On the plus side each serving of the vegetable soup contains a lot of great nutrients and a full serving of vegetables in every bowl. I think if I were to have this soup again I would simply doctor it up to make it more flavorful and less boring.

Return of a Cool Office

Hallelujah the AC is back on today!!! In case some of you northerners are unaware, AC is very important in Florida. In fact I keep my AC on almost year round. Only when its super cold out (like a low of 30) do I turn my AC off and I rarely turn the heater on. more »
