Tweeting for Advice

This afternoon I was working away at my computer when it hit me that I had no clue what to make for dinner. My creativity was no where to be found and none of my ideas sounded appealing.

I knew I had these ingredients waiting for my fridge. They needed to be eaten today or thrown away.

1/2 an Eggplant, Cherry Tomatoes, Mushrooms & 1/2 can of Chickpeas

I immediately turned to Twitter for advice and was bombarded by tons of tweets with great ideas. Got to love technology!

Here are some of the replies:

  • @TadorTott Eggplant lasagna or parmesan
  • @Lowandbhold check out The Life of Mrs. LC’s blog she had a great vegan eggplant roll up recipe on there recently that looked awesome
  • @bamarunner Eggplant Parm?

I pondered my predicament while enjoying a snack of Peach Chobani and Crumbled Peanut Butter Granola bar.

I came home refreshed and renewed and was able to piece together some of the ideas to make a great meal. :)

The first meal ideas that popped in my mind and on twitter when i mentioned the eggplant were all marinara base; however I feel like I have been on marinara overload lately and wanted to branch out a little.

I ended up taking @Lowandbhold’s suggestion of Lindsay’s Eggplant Rollups, but instead of the marinara route, I took @MissRayn‘s idea of balsamic. :)

I started by grilling the eggplant slices for a couple of minutes on the george foreman.

I then topped the slices with a smear of Goat Cheese, Fresh Basil and Raisins.

I rolled them tightly and placed them on top of a mix of chickpeas, mushrooms and tomatoes that I then drizzled with balsamic vinegar.

I baked the perfectly portioned for one meal for 10 minutes at 420 degrees then served.

The roll ups were great! I loved the addition of the raisins to the goat cheese. It gave it a nice sweet touch.

Someone posted a Sin Dawg recipe in my comments last night. Perhaps I’ll give it a shot this weekend? :)

Twitter is starting to replace google in my eyes. When ever I have a random question I always tweet away and get some great advice.

Febreze Home Collection Giveaway

I told you this week’s lunches were going to be leftover central. ;)

Today’s lunch left overs came in the form of a Chickpea Parmesan Burger.

Heated up in the microwave and stopped with some Marinara sauce and Mozzarella  cheese, this burger was still just as yummy as it was Sunday night.

I called them fries because I ate them fry like in their raw form. Raw green beans are very crunchy and refreshing to eat.

For something sweet, my lunch plate also included some Dried Mango and Pineapple.

Febreze Home collection Review

Normally I try to stay away from product samples that do not fit in with the Healthy Living theme of my blog, but as many of you may know I’ve been having some trouble potty training this little ball of fur.

That’s right, my apartment smells like dog! I figured this was the perfect opportunity for Febreze to come to the rescue and save my sanity. Currently, I cringe anytime someone enters my apartment. I am constantly paranoid of the distinct dog smell and am always on my hands and knees trying to find the latest culprit to scrub with Nature’s Miracle.

In an effort to cover the odor, the last couple of days I have been putting the new Febreze Home Collection to the test. On Monday I interspersed all of the home collection elements in various locations around my tiny apartment and I am happy to say my apartment now smells clean and fresh.

Green Tea & Citrus Flameless Luminary

Likes:

  • Smells Pretty
  • Very strong sent that masks odors instantly
  • Battery has an automatic shut off at 4 hour hours so that I can turn it on when I come home from work and it automatically turns off when I go to bed.

Dislikes:

  • The fact that it is battery operated. I am very bad at replacing batteries once they die.
  • The shade is very potent and once you’ve touched it with your bare hands, its impossible to wipe free of the strong scent.

Green Tea & Citrus Soy Blend Candle

Likes:

  • Smells Good
  • Candle is a good size, so it will last a while
  • I love lighting a candle in the kitchen once I’ve cleaned up for the evening. It brings peace to the room once I’ve destroyed it and put it back together again.

Dislikes:

  • When the wax melts it kind of looks burnt?

  • Great for covering up dog smells on spot locations

Dislikes

  • DO NOT use in car! This is probably a given but I had to ride with the window open this morning because the smell was a bit too strong.

 Green Tea & Citrus Diffuser

Likes

  • I love how stylish and modern the diffusers look
  • Small enough to find a spot on my sink in my bathroom
  • Made my whole bathroom smell wonderfully

Dislikes

  • Can very easily be spilled
  • The top cap doesn’t screw on, so it kind of just sits there?

Overall my apartment smells GREAT at the moment! You can’t even tell a dog lives here. :) I know these are all just temporary fixes, but for now they set my nose at ease. In a few weeks I have plans to do a full carpet steam clean and even after I know the new Febreze additions will keep my apartment smelling fresh.
