A New Marinutta Sauce Lover

I believe it’s officially fall when all my favorite fall/ winter squash go on sale at Publix. :)

As soon as I saw 79 cents a pound I couldn’t resist picking up one of each! I came home with Acorn Squash, Butternut Squash and Spaghetti Squash. Now all I need is come cooler weather to truly enjoy these. :)

Of course I do live in Florida and who can stand to wait for the cooler weather to make an appearance any time soon? Not me. The butternut squash was already on the menu for dinner tonight.

Yum! Butternut Squash is gooooood.

Tonight’s dinner was a Heather Eats Almond Butter inspired meal thanks to her unique Marinutta Sauce.

I’ve seen Heather and her hubby, CD, gobble up the marinara, nut butter and flax seed combo by the gallon on her blog. Not being one to shy away from fun combinations, I finally got the guts to recreate it tonight.

I combined about 1/2 cup of marinara sauce with a spoonful of flax seed, a spoonful of almond butter and the last of my soy sausage . I then placed the marinutta in the microwave for 1 minute.

After licking the mixing spoon, I could already tell this was a winner. :)

While I was experimenting with the marinutta sauce 1/2 the Butternut Squash, Brussel Sprouts, Baby Portobellos, and 1/2 an Onion was roasting in the oven.

The finish product with a little Feta Cheese sprinkled on top.

Can’t forget the addition of the Pumpkin Biscuit.

The marinutta sauce was a tad on the sweet side and really enhanced the flavors of the roasted veggies. This has only confirmed what I already knew to be true – Almond Butter goes with anything!!

For dessert I retrieved a Reeses Egg from my chocolate stash.

And this afternoon I snacked on some Dried Mango.

Now, please take my word, don’t be afraid to try interesting recipes. If a person says its good in a blog then more then likely it will be! I challenge you to make your own marinutta sauce at home. Don’t be scurrrred. ;)

Soy Sausage Redeems Itself Again

I was a busy bee on the computer this morning.

I usually work for an hour or so and take a break to make my morning cup of tea around 9:00. This morning I was in such a groove that I kept pushing back my tea time and didn’t even glance at the clock until 10:30! I love it when mornings are like that. :)

So, this morning instead of drinking my tea and then having my midmorning snack I had both at the same time. My tummy was feeling empty and I knew I needed some food.

This is a bag of pretzels that I received on a flight a while back. I wasn’t hungry for them at the time, so I saved them for a later date. I saw them in my snack drawer this morning and decided why not.

The combination of tea and pretzels instantly filled my stomach up. I felt like I had eaten an entire meal! I have never realized how filling pretzels are when combined with a cup of tea. That’s good to know for future reference. :)

Eventually my stomach depleted itself again and I was ready for my tasty lunch a little later then usual.

Last week I tested out the Gimme Lean Soy Sausage for the first time and was not impressed on how it tasted on its own. It was sort of off and I ended up feeding one of my two patties to Maddie.

Since then I have used the Soy Sausage as a pizza topper, an omelet filler and today it was the star of my pita along with some kale and feta.

I pressed my pita on the george foreman, until everything was heated through and I have to say it was really good.

So, now I am afraid I have to take away my original review of the soy sausage or I should say simply add on to it. I would not eat this stuff in patty form again, but as an additional filler or topper with other yummy things, its really not half bad. :)

With my pita I had some of my left over Radish and Carrot Salad with a few Cherry Tomatoes on top.

I think this salad was even better after sitting in the fridge overnight. Yum!

Maddie Update…

A few of you were asking how my post-op puppy was doing. Well, I am happy to say she is healing like a champ.

I took the cone off of her last week and watched her like a hawk to make sure she did not lick or pick at her scar. It was amazing how quickly her energy returned once the cone was gone. I haven’t noticed her picking at her stitches. She also doesn’t seem to care that she just has surgery a week ago, all she wants to do is play.

She is still sore though, and has not been jumping on or off the furniture as she  previously had (which is a good thing!). I’m thrilled to see the progress in recovery she has made in such a short period of time. My heart couldn’t stand to see her so miserable before.

Unfortunately, I am still dealing with a few training issues with my baby. She isn’t grasping the concept of potty training and she tends to be deathly scared of men. She is fine with Derek once he’s in the room, but if he leaves and returns she starts barking and runs right into my lap. She doesn’t try to attack them, but I’m afraid it might lead to that.

With that in mind I have signed Maddie up for puppy training classes that will begin this Thursday at our local PetSmart. I never did puppy classes with Abbie, so I am interested to see how they go. Don’t worry I will be sure to keep everyone up to date with her progress. I am sure there will be plenty of stories to share through this new experience. :)

I couldn’t resist showing off the new dress I’m so excited to be wearing today.

Please excuse the funny face. I was getting frustrated with the lack of light and my camera. lol

It was $15 at Old Navy yesterday. They had it in several colors and its really comfy! :)
