A Real Omelette

Good Sunday morning everyone!

I was happy to wake up this morning with slightly tight legs, but not too much soreness. What my legs needed was a nice relaxing recovery run to loosen them up and keep them in tip top shape.

Last night Kelly, Megan and I made last minute plans to meet at Baldwin Park for an early morning run. We set out to do 8 miles, but once we reached 7 we felt we had done enough and were all comfortable with stopping. It’s important to listen to your body sometimes and if it is honestly telling you not to push another mile, then listen to it and don’t push that extra mile.

The 7 we did do was nice and easy. I am really enjoying out weekly tradition of Sunday long runs. I know I say it each time, but I seriously love running with these girls. ๐Ÿ™‚

After the run I set out on a mission to make a real omelette. I’ve never actually made a real omlette. I’ve made srcambled eggs with yummy fillings but never a tried and true omlette where you flip the egg to hold a filling.

Well I’m happy to say my mission was a success. ๐Ÿ™‚

I made sure my pan was nice and hot and sprayed with plenty of Pam Spray. I used two whole eggs with a little bit of soy milk. Patience was key as I swirled the pan around making sure the egg was completely cooked on the bottom before using two spatulas to flip it.

I filled my beautiful omlette with Soy Sasauge, Kale, Tomato, Onion and Feta. It was really, really yummy. I think it tasted better because I knew it was perfect.

With my omlette I had a fruit salad of Apple, Plum, and Kiwi and a pumpkin biscuit..

Wish Derek and I luck. We are going to attempt to ride the new coaster at Universal again. Cross your fingers for short lines, not rain and a functioning coaster! ๐Ÿ™‚

Wow, good job with the omelette! Flipping it perfectly is not a very easy thing to do. Very Julia Child-esque:)

I love omelettes. If you want to make it even easier, you can cook the fillings inside the eggs – then they don’t fall out when you try to cut it and eat. ๐Ÿ™‚

Now I’m craving eggs…

Hey Meghann.. this might be a weird question but have you ever had something thrown at you while you run? Someone threw a full can of Dr Pepper at my head this morning while I was running (they missed!). I was so angry I couldn’t get their license number.. I was wondering if this ever happens to anyone?

aww sorry i missed you guys!

i did 5 miles this morning and thought i was going to die!! way to go on 7. i think lifting weights last night didnt help me LOL

I still have not mastered a perfect omelet, but yours looks great! I love going to amusement parks but those lines can be crazy. Have fun
